Gujrati Dhokla

I thought of making gujrati dhokla today. Dhokla flour is available in Indian Grocery store. 
Note - The image is shown of dhokla after I made tempering of oil and red chilly powder after its done and cut into pieces.
To make Dhokla flour you will need :-
2 cups dhokla flour
1/2 cup yogurt
Salt to taste
Sugar to taste
1 tablespoon ginger chilly paste
3-4 tablespoon oil
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder
Water as needed
Eno as needed

Take a bowl and add dhokla flour and yogurt and water as needed to make little thick pouring consistency batter. Cover it with lid and then allow it to sit for 3-4 hours. After that add all the spices and mix well. Add oil and heat up and add mustard seeds to it to make tampering of it. Add to batter, aslo add eno 1/2 teaspoon to it. Mix well. Greese the dhokla plate with oil and pour the batter. Put dhokla plate in steamer and steam till it gets cooked. Cook on medium flame. After that remove carefully from steamer and then make pieces of it and enjoy with chutney.

Orange and Beetroot Juice- Baby Food

 As earlier I shared Pineapple and Beetroot juice, the method is same just take orange juice instead of  Pineapple juice and mix with beetroot juice.

You can adjust proportion  of  orange and beetroot juice as per your child preference. This is best way to feed them beet.

Pineapple and Beetroot Juice- Baby Food

When you want to feed your child beetroot in a way that they don't bother about taste, make this yummy juice.

To make Pineapple and Beetroot Juice you will need :-
1 cup pineapple juice
3-4 tablespoon beetroot juice 
Sugar if desired
Salt to taste

Take pineapple juice and beetroot juice and mix well. Add salt and sugar if needed. Your baby will love this juice for sure.

Beetroot Raita

 Today I will share with you very simple recipe of  beetroot raita. It can be made in minutes and adds an extra dish when you do not have much time to make lengthy recipe.

To make Beetroot Raita you will need :-
2 teaspoon shredded beet
 Salt to taste
Pinch of cumin powder
1 cup yogurt

Take a bowl and add yogurt and beetroot and mix well. Add salt and cumin powder and mix. Enjoy chilled.

Coconut Chikki

I have earlier shared recipe of the til (sesame seeds) chikki, the process is same just you do not have to roast coconut and use coconut flakes (dry) instead of til.

It tastes so good, you can also give it your kids as this is very healthy.

Note :- Please refer sesame seeds chikki  to make coconut chikki. The measurement is same, just the ingredients changes. You can also make of dalya, peanut,etc.

Til (Sesame Seeds) Chikki

Hey guys I am back with my new recipe.

I am making very easy recipe of Til Chikki

To make Til Chikki you will need :-

1 cup jaggery
1 cup roasted sesame seeds
1 teaspoon ghee
Water as needed

Take a pan and add ghee to it and then add powdered or crushed jaggery to it. Stir it continuously on low to medium flame till the mixture is bubbling and change its color to little dark brown, then add sesame seeds to it and mix it well. Transfer this mixture to aluminium foil and let it rest little bit. Cut it in desired shape or leave it like that and when it gets cooled off completely then just lift it and make pieces out of it. It stays good for about a week at room temperature.

leftover pizza dough- Aloo Kulcha (Potato Stuffed Flat Bread)

I had some leftover pizza dough and leftover potato masala from my aloo paratha. 

To make Aloo Kulcha roll pizza dough using rolling pin and all purpose flour and put potato mixture in it and cover it and roll again. Preheat oven for about 5 minutes and then put this aloo kulcha in oven at 250 degrees for about 5 minutes turning over. Cook till you see golden spots on it. Take it out carefully and then serve with a dollop of butter on top of it.

Calzone

I had leftover pizza dough and I thought of making Calzone out of it. I have made the recipe very easy and can be made in minutes.

To make Calzone you will need :-
1/4 cup chopped onion
1/4 cup bell peppers
1/2 cup cheese
1/2 cup ketchup
Salt to taste
Butter as required
2-3 olives chopped (optional)
Pizza seasoning as per taste
Parley as per taste

Take a pizza dough and roll it using all purpose flour and rolling pin. Preheat oven for 10 minutes. Meantime on rolled pizza dough apply ketchup, onions, bell peppers, olives, salt and pizza seasoning. Fold it moon shape and seal the sides and slit on top little bit for air to pass. Apply butter, parsley and pizza seasoning and then bake it in oven at 325 degree for about 15-20 minutes or till it gets cooked from both sides. Allow it to cool down little bit and serve hot.

How to freeze mango pulp

I love mangoes and like to make variety of items from it. 

Take ripe mangoes and then wash it and peel it, make small pieces of it keeping away seed of it. Add to blender and blend it till smooth. Put this pulp in airtight container and freeze it in freezer. Before using it just take out container before 4-5 hours and then you can use it. Put remaining pulp back to freezer otherwise it will become little dark in color. 

Dudhpak (Milk Dessert)

Dudhpak is traditional recipe in which milk and rice is combined with sugar and some other ingredients to make it very rich dessert. It is served with malpuva or poori.

To make Dudhpak you will need :-
8 cups of milk
2-3 cups of sugar
5-7 saffron strands
1/2 cup rice
7-8 almonds
2 teaspoon charouli (available in Indian grocery store)

Take a pot and add milk, and washed rice to it and bring it to boil and then add sugar to it. Add saffron to it. Now add almond soaked in water for few hours. Make sleeves of almonds. Also add charouli at that time and allow milk mixture to boil till rice cooks and milk gets little thicker. Always keep flame to medium or low. Stir in between. Allow it to cool down.
Serve warm or at room temperature with poori.

Bagel Pizza

This is quick appetizer or lunch when you do not want to spend more time in cooking. I had some leftover everything bagel and thought of making something interesting out of it.

To make bagel pizza you will need :-
3 bagels
1/2 cup ketchup
1/2 cup chopped onion
1/2 cup chopped bell pepper
Olives as per taste
Jalapeno as per taste
Salt to taste
1 cup cheese
1 teaspoon mixed herbs

Take bagel and cut it in half and then toast it little bit. Then put the bread side up on griddle and then apply ketchup, onion and bell peppers on top of it. Sprinkle salt and mixed herbs as per taste. Add cheese and cover it with lid till cheese melts. Serve hot.

Tip of the Day- Baby Vegetable Puree

Hey guys if you know a child or you have who has problem eating vegetable puree than try this trick so that your baby can get enough vegetables in her meal.

I have already shared baby vegetable soup or puree and in that add 2-3 teaspoon of puree of any fruit which your child likes. I added mango pulp to vegetable puree and it was liked by my son so much that he started eating vegetables puree.

I have also tried with apple, black grapes, peach and plum puree, just mix according to your baby's taste in vegetable puree and they will love to eat it.

How to freeze masala poori

I had some guest coming over this weekend and thought of making stomach filling breakfast for all. So I thought of freezing some masala poori. I made some masala poori a day before and freezed them.

To freeze poori you will have to roll poori not too thin and not too thick and then keep each of them between parchment paper and then put it in ziploc bag and freeze it in freezer for about 15-20 hours. When you want to use this just take them out and microwave it for about 20-30 seconds and then fry these poori in oil. They will puff up. 

Enjoy warm or at room temperature with cup of tea and some pickled green chilies.

Baked Potato Fries

In shravan month I tried with this baked potato fries and it turned out very well, very crispy and it taste so nice that you don't even need to add any spices.

To make Baked Potato Fries you will need :-
2 large potatoes
Salt to taste
1 teaspoon oil

Wash potato and peel it. Cut it length wise and put it in water. Now in oven proof tray line foil and on that arrange separately all the fries. Also sprinkle oil on it. Put it on roast for 4-5 minutes at 250 degrees and then increase temperature to 350. Change it sides after 15 minutes. Do check in between. Allow it to cook more 5 minutes and turn off the oven and enjoy after they cool down little bit. Add salt as per taste.

Masala Beet

I am back with my new recipe. Some people don't like beet, and same is the case with me but I made very interesting recipe so that all of you can enjoy.

To make Masala Beet you will need :-
1 beet (diced)
Salt to taste
Chaat Masala to taste
1/2 lemon juice

Take 1 beet and peel it and after washing make dice of it. Boil it in water. When they are tender carefully remove all water or drain them and let it cool. After that transfer to bowl and add salt, lemon juice and chaat masala and enjoy.

If you want to give it your kids just add lemon juice and little salt to it.

Tuvar Dal- Baby Food

Let me share with you tuvar dal baby food recipe :-

1 cup boiled tuvar dal
3 cups water
Jaggery as needed
Salt to taste

To make tuvar dal baby recipe you will need washed tuvar dal and soak it for 4-5 hours. In pressure cooker add dal in small pot and cover with lid. Also add water in pressure cooker about 2-3 cups and hear about 3-4 whistle. Let it cool down completely. Now mash dal with help of blender and add salt and jaggery as per taste. Add little water to make it little liquidy.

Vegetable Soup- Baby Food

I am back with my baby food recipes.

To make Vegetable Soup you will need :-

1/2 cup chopped zucchini
1 cup chopped carrot
1/2 cup yellow squash
1/4 cup bottle guard chopped
Salt to taste
Water as needed

Take pressure cooker and add all the vegetables and add 3-4 cups of water and close it and hear about 4-5 whistle. Let the pressure cooker cool down completely. Add little salt as per taste and feed your baby. You can adjust consistency as per your choice.

For more flavor you can also add tomatoes and potato in it.

Croissant Cups

I bought Annie's croissant tin and made with it pizza cup, and spinach and artichoke cup.

To make Croissant cup you will need :-
3-4 croissant
1/2 cup cheese
2-3 tablespoon spinach artichoke dip
Salt to taste
1-2 tablespoon ketchup
onions and bellpeppers as needed

Spray  cupcake maker with oil or butter and place one croissant  and spread it and fill the filling of your choice. To make pizza cup add ketchup, onion and cheese.

For spinach and artichoke add dip and salt and pepper and cheese on top and bake it for 325 degrees for 15-20 minutes. Serve warm.

Cheese Croissant and Spinach and Artichoke Croissant

I bought Annie's Croissant tin from store and used it. You can add flavors of your choice.

To make Cheese Croissant you will need
1/2 cup cheese of your choice
2 croissant

Take 1 at at time and fill cheese in it and roll it in style of croissant and bake it at 325 degree temperature for about 15 to 20 minutes or till they are golden brown in color. Let it cool little bit and serve.

To make Spinach and Artichoke Croissant you will need :-
1/2 cup spinach and artichoke dip
2 croissant

Take 1 at a time and fill with the mixture of dip and roll it and bake it. Bake at 325 degree temperature for about 15 to 20 minutes or till they are golden brown in color. Let it cool and then serve.

Grlled Zucchini

Hey guys this grilled zucchini taste amazing. It is very simple to make it and you do not need any grill for it. 

To make Grilled Zucchini you will need :-
2 large zucchini cut length wise
Salt to taste
2 teaspoon lemon juice
1/2 teaspoon black pepper

Take panini maker and put the temperature to medium and put length wise cut zucchini on it and and grill till you find marks on it. Turn it over and do the same process. Carefully remove from it and then put it in plate and add salt, lemon juice and black pepper and enjoy when it is little warm.

Prunes Chutney

Hey guys this is the easy version of Indian tamarind and dates chutney. This prunes chutney is very easy to make and it taste almost same like Indian tamarind and dates chutney.

To make Prunes Chutney you will need :-

1 cup prunes 
2-3 cups water
Salt to taste
Sugar as needed
1 teaspoon coriander cumin powder
1 teaspoon red chilly powder

Take prunes and wash them and put water and prunes in pressure cooker and hear about 2-3 whistles. Let it cool completely and then strain it by mashing it with help of spoon and then add salt, sugar, coriander and cumin powder and chilly powder to it. Mix well and enjoy. It stays good in refrigerator for about week.

Tortilla Samosa

I used tortilla to make samosa this time. It is super easy and you can make it very fast and the outcome is very good.

To make tortilla samosa you will  need :-
2 medium size tortilla (flour)
1 boiled potato
Salt as needed
1 teaspoon sugar
1 teaspoon garam masala
1/4 teaspoon amchur powder
1/2 teaspoon ginger chilly paste
Oil for frying
Water as needed
2 tablespoon all purpose flour

To make all purpose flour paste add water to it slowly as needed and mix to make it paste like consistency.


Mash potato and add sugar, salt, garam masala, ginger chilly paste, amchur and mix well. Put it aside. Now take tortilla and make 4 equal parts with knife. Take one part and apply all purpose flour paste on while making triangle and then fill the potato mixture in it. Seal it with all purpose flour paste and fry on medium flame in oil and when it turns little brown on both sides take it out and serve when it gets at room temperature.

Biscuit Pizza

I like to try new recipe with using different ingredients and they turn out good. I tried with Pillsbury biscuit dough to make pizza.

To make Biscuit Pizza you will need :-
1 packet of Pillsbury biscuit dough
Ketchup as needed
Sriracha sauce as needed
1/2 cup chopped onion
1/2 cup chopped bell pepper
Italian seasoning as needed
1 cup cheese

Take one dough part at time and roll it and then spread ketchup and sriracha sauce as needed. Top with onion and bell peppers and cheese. Add Italian seasoning on it and bake it in oven at 375 degree temperature for about 10-15 minutes or till you find it is cooked. Take it out carefully and serve.  

Plum, Mango and Red Grapes Smoothie

I like to try new combinations of fruits and every time it turns out so good and I thought of using plums as they are in season. I used red plums for this smoothie.

To make Plum, Mango and Red Grapes Smoothie you will need :-

2-3 large plums chopped 
1 cup grapes
1 mango diced
Sugar as needed

Take all the fruits to blender and add little sugar if needed and ice cubes and blend. Enjoy on hot summer day. Add little water or orange juice if you want it little less thick.

Mango, Bluberries and Cantaloupe Smoothie

I made this smoothie when I had guest and they just loved it. I used Kent mangoes in it. 

To make it you will need :-
1 cup mangoes diced
1 cup blueberries
3 cups cantaloupe

Wash blueberries properly. Add diced mangoes and cantaloupe in it and then blend. Add orange juice for more flavor. Serve chilled.

Red Grapes, Banana, Cantaloupe and Strawberry Smoothie

I like to make smoothie for my snack. It is good source of energy when you have a glass of it in hot summer days.

To make you will need :-
1 cup grapes
1 cup strawberry
1/2 banana
2 cups cantaloupe

Take all the fruits and wash them properly. For cantaloupe peel it remove seeds and make cubes of it and then put in blender. Add other fruits too and blend. Pour in glass and enjoy. For serving chilled add ice cubes in blender.

Leftover Recipe- Onion & Tomato Puree

 I had some leftover chopped onion and tomatoes and I wanted to make best use out of it.

To make Onion Tomato Puree you will need :-
2 cups onion chopped
Water as needed
Salt as needed
2 cup tomato chopped

Take mixture jar and then add onion and tomatoes and churn them. For smooth paste add little water to it. Take it to plastic container and add little salt to it and mix well. Freeze it and it will be good for about week.

You can use it punjabi subji, making gravy for Masala Chole or even Indian style pasta.

Note :- Do not refrigerate,  freeze it in freezer.

Leftover Recipe - Detox drink ( cucumber)

Hey guys I like to share the things which I have tried and also the taste of which is very good.
I had some finely diced cucumbers as leftover with me so I thought of making detox drink out of it.

To make Detox drink of cucumber you will need :-

1-2 cups cucumbers
2-3 slices of lemon
3-4  cups of water

Take a jug and add water and cucumbers and mix well. Add 2-3 slices of lemon and if you want you can squeeze one slice of lemon. Allow it to rest for 2-3 hours and serve. You can also add ice before serving.

Note :- Drain cucumber and lemon slice before serving. 

Tip- How to use leftover green chilies

Green Chilies are used in our everyday food. I like spicy food and when it comes to green chilies I make most use of it.

I had bought some extra green chilies as I found this week little cheaper. I washed green chilies and made them completely dry and then took out seeds and made a rough chop and freezed it in container.

Also if you find that your chilies are going to stale in few days then wash them and cut them into large pieces and keep in ziploc bag in refrigerator and it will be good for about week. 

Tip- How to store leftover naan

 I had a party last week and I had some left over naan after distributing to friends. I thought of making good use of it.

When the party was over immediately I kept all the naan (butter) in a ziploc bag and kept in freezer. I am taking out naan as required and keep at room temperature for about 1 hour before using and it is still fresh. After one hour of resting at room temperature or 30 minutes, you can microwave or make it warm on griddle. I have tried both the methods, making warm in microwave and on stove top and it does not feel chewy to me. 

So go ahead and try to freeze your naan and use it for a week!

Note :- Please check naan every time before you eat or use it, if you find bad smell or taste is bad then do not use it.

Mooli Paratha (spicy)

I have earlier showed recipe of easy version of mooli paratha but I tried with this one and it turns out real good. This method is little lengthy but the paratha comes out really good.

To make Mooli Paratha you will need :-
1 cup diced mooli
1/2 cup roughly chopped onion
2-3 cloves of garlic
2-3 tablespoon coriander leaves
Salt to taste
2-3 teaspoon oil
1 teaspoon garam masala
1/2 teaspoon coriander cumin powder
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder
Roti atta as needed
Oil for roasting paratha

Take grinder and add mooli, onion, coriander and garlic to it and chop it very fine. In a pan add oil and add this mixture and allow it to roast. Add all the spices and mix well. Allow it to cool down completely. Take roti atta and roll small roti and fill about 1-2 tablespoon mixture into it and cover it and then roll it again using some wheat flour. Heat the griddle and then add paratha to it. Roast on both sides and then apply oil on both sides to roast it properly. Serve hot with ketchup or yogurt.

Mango Koprapak ( Ladoo)

I like to make dessert which are simple and although liked by everyone. I know for sure that everybody likes mango too much. 

To make Mango Koprapak you will need:-

2-3 cups of coconut (dry)
1 teaspoon cadamom powder
3/4 cup mango pulp
1 cup condensed milk
few strings of saffron
Milk as needed
1-2 tablespoon ghee

Take a pan and coconut to it. Roast upto 3-4 minutes on medium flame. Let it cool down completely. Add mango pulp, condensed milk and cardamom powder to it. Add saffron in 1-2 teaspoon milk and allow saffron to loose some color in milk and then add to the mixture. Mix all the things well and make ladoo. For fine finishing rub your palms with ghee and then roll it.

This will stay good at room temperature for about 1-2 days and after that in refrigerator till 1 week in airtight container.

Vegetable and Beet Soup

Hey guys I am back with new recipe of soup. This time healthy and very tasty recipe.

To make Vegetable and Beet soup you will need :-
1 cup carrot
1 cup tomato
1 cup beet
1 cup cauliflower
1 cup cabbage
Salt to taste
Sugar to taste
1 teaspoon black pepper

Wash all the vegetables and peel carrot and beet. Make dice of carrot, tomato, beet, cauliflower and big pieces of cabbage. Take pressure cooker and add all the vegetables. Add water about 6-7 cups or till all the vegetables are completely under water. Hear about 6-7 whistles. Let it cool down completely. Then add salt, sugar and black pepper as per your taste. Mix well and serve hot.

You can also add garlic and onion powder if you like.

Mexican Beans Chilies

I like to make recipes which are easy but tasty. Today I tried with these Mexican chilies.

To make Mexican Chilies you will need :-
2 Anaheim chilies (Long)
2 cups of Rosarita Refried Beans (Vegetarian)
2-3 tablespoon salsa
Pinch of salt
Pinch of cumin powder
Taco seasoning as required
1/2 cup finely chopped onion
1/2 cup finely chopped bell peppers
Oil as needed
Cheese as per your taste

Take 2 anaheim chilies and wash them and slit in from middle to make 2 long even parts. Remove all the seeds. Apply little oil on it. Take a bowl and add beans,salt, cumin powder, taco seasoning, onion and bell pepper to it as per your taste. Add salsa to it and mix well. Fill this mixture in cut chilies and spread some cheese on top of it. Bake it in mini oven for about 5-6 minutes or till the chilies gets tender. Serve war,

Adjust temperature of oven to medium as per your oven.

Vegetable Enchilada in Red Sauce

This is the easy version of vegetable Enchilada which can be made in within 15 minutes. I used store bought tins for beans and sauce and mixed some of the spices and my enchilada is done.
To make Vegetable Enchilada you will need :-
1 cup finely chopped onions
1/2 cup finely chopped bellpeppers
1 tin of Rosarita Refried Beans (vegetarian)
1 tin of Enchillada Sauce Red (Great Value-Walmart)
Salt to taste
Taco seasoning as needed
Pinch of cumin powder
Water as needed
Sugar as needed
Chilly powder as needed
1/2 cup finely chopped lettuce
6 large flour tortillas
Butter for roasting
Cheese for garnishing
1 small tin of Tomato puree
4-5 tablespoon of salsa

Take a pot and add beans to it and add taco seasoning as required and cumin powder  and salsa as per your taste.  Heat it on low flame. In another pot take enchilada sauce add salt and sugar as per your taste. Add 4-5 tablespoon of tomato puree to it. Add red chilly powder to it and taco seasoning. Mix well and allow it to boil.
 Roast tortilla with butter little bit on both sides. For assembling enchilada first take tortilla and apply enchilada sauce on both sides and then put beans mixture on it  and vegetables of your choice and roll it tightly. Similarly make all other. Place in large baking tray and pour some more enchilada sauce on it and top it up with cheese and put in oven for 10 minutes on lowest temperature. Remove carefully while turning off the oven and serve hot with salsa and chips.

Carrot and Tomato Soup (Baby Food)

To feed a baby is a task sometime. They also do not like same food everyday. 

To make Carrot and Tomato Soup you will need :-

1 big carrot diced
1 big tomato diced
Salt to taste
Water as needed
Pinch of sugar

Take a pressure cooker and add diced carrot and tomato after washing them properly. Add required water as per your pressure cooker. I generally add 3-4 cups of water and pressure cook upto 5-6 whistles. When pressure cooker is cooled completely then remove the excess water and churn it. If required  then pass through strainer. Add salt and sugar as needed. Serve after it is completely cooled down. Do not serve hot it might hurt your baby.

Semolina upma (Baby Food)

I am back with my new variety of baby food.  It is feed to baby when she is starting to take solids and some soft pieces of food.

To make Semolina Upma you will need :-

2-3 teaspoon of semolina
1/2 teaspoon butter
Pinch of salt
Pinch of cumin powder
Water as needed
1/2 teaspoon yogurt

Take a pan and add butter/ghee to it. Add semolina and roast it till it changes color little bit. Add water little at time  and add yogurt. Add salt and cumin powder to it. Stir continuously till it gets cooked. Take out in bowl and cool down completely. Feed your baby when it is cooled completely.
