Tawa Pulav

To make Tawa Pulav you will need :-

2 cups basmati rice
5-6 tablespoon oil
1 cup finely chopped bell peppers
1 cup finely chopped onion
1 cup finely chopped tomatoes
Salt to taste
1 tablespoon pavbhaji masala
1-2 lemon juice as per your taste
1 teaspoon turmeric powder
2 tablespoon cumin 
2-3 tablespoon red chilly powder
3-4 tablespoon butter
Water as needed
Cilantro for topping
1 tablespoon green chillies finely chopped
1 tablespoon garlic paste
1 tablespoon cashew pieces
1 tablespoon raisins

Take a pot and add washed rice and water to cook it. Cook only 85%. Drain excess water and spread rice so that they don't stick. Add 1 tablespoon oil and little salt while cooking rice.

Take a pan and add oil and butter and cumin seeds and after that add garlic paste, green chillies, onion and mix well, let them cook well. Add chopped bell pepper and tomatoes after that and all the spices to it and cook. Add raisins and cashews. Add boiled rice and lemon juice and cilantro on top of it and mix well. Serve warm with papad and yogurt.

Paneer Cutlets

To make Paneer Cutlets you will need :-

2 cup paneer (grated)
Salt to taste
1 lemon juice
3-4 tablespoon bread crumbs
1 teaspoon red chilly powder
1 teaspoon chat masala
1/2 teaspoon garam masala
1/4 teaspoon turmeric powder
Oil for roasting
water as needed

Take a bowl and add grated paneer, salt, lemon juice, bread crumbs, chilly powder, chat masala, garam masala, turmeric powder and mix well. If you feel your mixture little dry add few spoons of water. Make round flat cutlets out of it. Heat griddle and add some oil and roast cutlets till they are brown on both sides. You can serve with mint chutney or tamarind chutney.

I also use this cutlets as option as paneer kofta in my curry.

Sesame seeds, Fennel Seeds and Carom seeds mukhwas (Til, variyadi and ajmo mukhwas)

To make mukhwas you will need :-

1 cup sesame seeds (white)
1/2 cup fennel seeds
1/3 cup carom seeds
Salt to taste
Turmeric as needed
2 lemon juice

Take a bowl and add sesame seeds, fennel seeds and carom seeds and mix well. Add turmeric, salt and lemon juice and mix well. Keep it aside after mixing it for about 4-5 hours and in between mix it after every hour. Keep it closed. After that take this mixture to a pan and roast it on low flame. Stir it continuously otherwise it will burn. After 10-15 minutes check if they are roasted and crisp. Turn off the stove and allow it to cool down. After cooling down you store it in a glass jar or steel container for longer use. It stays well for about 3-4 months. 

Grilled Corn and Broccoli Salad

Hi guys let me share you something interesting.

To make Grilled Corn and Broccoli Salad  you will need :-
1 cup broccoli cut
1/2 cup frozen corn
1 teaspoon oil
1 teaspoon black pepper powder
1 cup chopped tomatoes
3-4 tablespoon chickpeas (boiled)
1/2 cup red grapes
Salt to taste
1 tablespoon lemon juice
Pinch of sugar
Cilantro Chopped as needed

Take a pan and grill broccoli and corn together till they get little broiled. After it gets cool down then add tomatoes, chickpeas, red grapes cilantro, black pepper, salt, sugar and mix well.
Serve chilled.

Chilly Fries Potato

Hey guys I am posting after long time. I came up with easy version of Chilly Fries potato.
To make Chilly Fries Potato you will need :-
2 cup frozen potato fries
2 tablespoon red chilly sauce
2 tablespoon soy sauce
2 tablespoon ketchup
1 teaspoon black pepper powder
Salt to taste
1/2 teaspoon sugar
1 cup chopped green onion
1 cup yellow onion length wise cut
1 cup bell peppers cut
2 teaspoon garlic chopped
2 tablespoon oil
Water as needed
1 tablespoon corn flour
Sesame seeds (optional)

Take a broad pan and add oil to it and when oil gets hot add garlic and onion. Saute it little bit, dont overcook. Add bell peppers to it and saute. Add sugar, salt and black pepper to it. In meantime airfry french fries and make it extra crispy. Keep on side. Now in small bowl add ketchup, soya sauce, red chilly sauce, corn flour and little water at time to make thin paste. Add this paste to veggies. Allow it to cook little bit and add french fries to it. Mix well and green onions on top of it. Add  1 teaspoon sesame seeds on top if you like.

Carrot Paratha- Kids recipe

Kids like to eat which attracts them. I tried to make easy recipe but all healthy one.

To make Carrot Paratha you will need :-

1 cup shredded carrots (remove all the water from it)
2 cups of wheat flour
Salt to taste
3-4 tablespoon ghee
1 teaspoon cumin seeds
Chopped cilantro
Water as needed

Take a bowl and add wheat flour to it. Add carrots, salt, chopped cilantro and 2 tablespoon ghee to it. Add water and make dough. Apply little ghee to make it smooth. Allow dough to rest for atleast 10 minutes. Make paratha out of it and roast in on griddle. Cook on both sides and apply ghee on both sides and roast well. Serve with yogurt.


Besan Chilla - Kids recipe

If you have a toddler at home you know that in order to give them variety of food which is healthy too is a task nowadays.

To make Besan Chilla  you will need :-

1 cup besan
Salt to taste
1/4 teaspoon turmeric
1/2 teaspoon red chilly powder
3-4 tablespoon yogurt
Water as needed
2 tablespoon shredded carrots
2 tablespoon shredded zucchini
2 tablespoon ghee/butter

Take besan and add yogurt to it. Add red chilly powder and turmeric to it. Add water to it to make a runny mixture like pancake. Allow it to rest for about 15-20 minutes. Add carrots and zucchini to it and mix well. Heat up nonstick griddle and add ghee on it and spread a big ladle of besan mixture on it. Allow it to cook on medium flame on one side till it gets little brown spots. Flip it and add ghee again and cook on other side. Cook on both  the sides and serve warm. 
For kids serve with ketchup or yogurt. 


Beans oats

I like to try different variety of food all the time. I tried to make a healthy version of oats.

To make Beans oats you will need :-
1/4 cup boiled chickpea
1/4 cup boiled black beans
1/4 cup boiled kidney beans
Salt to taste
1 teaspoon red chilly sauce
1/4 teaspoon turmeric
1/2 teaspoon red chilly powder
2 tablespoon ketchup
Pinch of black pepper
1 cup oats
1/2 cup water
1 tablespoon oil
1 teaspoon cumin seeds
Cilantro (optional)

Wash oats for one time (optional). Soak it in water for 15-20 minutes.  Take a pan and add oil to it. Add cumin seeds to it and then allow it to sizzle. Add oats to it along with water and all beans to it. Add all the spices to it. Add ketchup and red chilly sauce to it. Mix well and cook it till you get little firm mixture or oats are cooked. Serve warm. Add cilantro on top.


Vegetable Oats

Hi guys I am back with my new recipe. I have not posted any recipe from long time. Today I got some time to write again.

To make Vegetable Oats you will need :-
1 cup water
1 cup oats
1 green chilly finely chopped
1/4 cup mixed vegetable ( I used frozen vegetables)
Salt to taste
1 teaspoon oil
1 teaspoon cumin seeds
2 tablespoon ketchup
1/4 teaspoon turmeric
1/4 teaspoon red chilly powder
Garam masala (optional)
Cilantro (optional)

Wash oats with water for 1 time (optional). Soak oats in water. Take a pan and heat up oil. Add cumin seeds to it.  Add green chilies to it.When they sizzle then add all the vegetables (carrots, beans, corn, peas). Saute them little bit. Add soaked oats in water into it. Mix well and allow it to cook till you get little firm mixture or oats are cooked. Add ketchup and mix well. Add garam masala and cilantro if needed and mix well. Serve warm.

Fusion Chilla- Kids recipe

To feed a picky eater kid is not an easy task. I keep on trying new recipes so that I can feed my son well.
To make Fusion Chilla you will need :-

2 tablespoon instant dosa flour
1 teaspoon chickpea flour
1 teasoon handva mix flour
1 teaspoon shredded carrot
1 teaspoon shredded beetroot
1 teaspoon shredded cheese
Salt to taste
Pinch of red chilly powder
2-3 tablespoon yogurt
Pinch of turmeric powder
1-2 tablespoon ghee
Water as needed

To make chilla mix dosa flour, chickpea flour, handva flour and yogurt. Add salt, red chilly powder and turmeric powder. Add carrot and beetroot to it and mix well. Add some shredded cheese to it. Mix well and keep it for 10 minutes. Heat up griddle and add ghee to it and spread prepared mixture on it and cook it on both sides. Add some shredded cheese on top of chilla before serving. Serve warm with ketchup or yogurt.

Vermicelli with milk

I am back with my dessert recipe. This  is my husband's favorite dessert. 

To make Vermicelli with milk you will need :-
4-5 cups of milk (full fat)
4-5 tablespoon sugar
1 teaspoon cardamom powder
1/4 cup vermicelli (roasted)
1 teaspoon ghee

Take a pan and ghee to it. Add roasted vermicelli and then roast it in ghee for 1-2 minutes till it turns little golden brown.  In another pan add milk and sugar and warm it till it gets 1-2 boils. Then add this boiling milk to vermicelli. Be careful doing that. Mix well add cardamom powder to it. Mix well and cook it till vermicelli gets soft and gets little bigger in size. Allow milk to boil for 15-20 minutes. Serve warm.

Semolina (Rava) Chilla - Kids

To make kids eat is very hard task if they are picky eaters. My son is picky eater and I have to try lot of things so that he can eat properly.

To make Semolina Chilla you will need :-

1 tablespoon butter
1 cup semolina
1 tablespoon yogurt
Salt to taste
Pinch of turmeric
1 tablespoon carrot juice
Water as needed
Red chilly powder (optional)

Take a bowl and add semolina, yogurt, carrot juice, turmeric, salt and mix well. Add enough water to make the batter like chilla. Allow it to sit for about an hour. Heat up pan and add butter on it. Add a ladle of batter to it and make chilla. Cook it on both sides. Serve warm with yogurt or ketchup.

Dalwada Chilla- Leftover recipe

Hey guys I always like to try new recipes and always want to make best out of leftovers.

I had leftover Dalwada batter and I did not want to waste it. So I added 1 more green chilies finely chopped to it. Add 1 teaspoon oil to it and mix well. Adjust salt accordingly.

Heat up pan add 1 teaspoon oil on it. Add a ladle of dalwada mixture and make chillas. You can make big or small as per your taste. Roast it on both sides till it gets brown spots on it. Apply oil if needed on other side too. Serve with coriander chutney or ketchup.

Methi Ringan and Vatana Subji (Fenugreek, eggplant and peas subji)

Hi friends I am back with my new recipe of subji. In winter fresh fenugreek is available and I just love any recipes made out of it.

To make Methi Ringan and Vatana Subji you will need :-
2 bunch of methi (fenugreek) washed and chopped
1 cup frozen peas
1 medium size eggplant
Salt to taste
2 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon red chilly powder
1/2 teaspoon turmeric powder
1 teaspoon coriander cumin powder
Water if needed

Take a pan and add oil in it. Add mustard seeds and allow it to crackle. Add diced eggplant after washing it. Allow it to cook for 4-5 minutes. Add little water if needed. Add methi and peas together and mix well. Close lid and allow it to cook till everything is cooked well. Add salt, red chilly powder, coriander cumin powder and turmeric powder. Mix well. Cook it for about 1 minute. Allow excess water to dry little bit. Serve with bhakri, roti or rotla.

Corn, Spinach and Onion Subji

Spinach is my husband favorite vegetable. I try to make different recipes for him while using spinach.
To make Corn, Spinach and Onion Subji you will need :-

1/2 cup corn
1 bunch of spinach chopped and washed
1 small onion chopped
Salt to taste
1 teaspoon cumin seeds
1 teaspoon red chilly powder
1/2 teaspoon coriander and cumin powder
1/4 teaspoon turmeric powder
1 tablespoon oil

Add oil in pan and add cumin seeds to it. Allow it to crackle it and add onion to it and saute it. Cook it well and add spinach to it and cook well. Add corn and mix well. Add all the spices and salt to it and then cover it and allow it to cook for about 2-3 minutes. Serve hot or warm with roti.

Tip of the day- baby food

I add half of orange juice or tangerine juice to my son soup when I feed him any soup at room temperature. It adds extra flavor to it and you can feed more fruits to them in this way.

Carrot and Zucchini and Lentil Soup- baby food

My son is very picky in his food. I have to try lot of new things so that I can give him some nutrition.

To make Carrot, Zucchini and Lentil soup you will need :-

2 carrots washed and chopped
1/4 medium size zucchini peeled and chopped
2 tablespoon pigeon peas lentil boiled (paste)
Water as needed
Salt as needed
Pinch of turmeric

Take a pressure cooker and add carrots and zucchini to it and water to it pressure cook it. Mash is it with hand blender and then add lentils to it. Add salt to it and little bit of turmeric to it. Boil it for a minute and when it cools down completely you can use it.

I serve at room temperature to my son this soup.

Cranberry Pickle- Indian Style

Cranberry Pickle is my favorite pickle. It is so easy to make and you can use it for longer time.

To make Cranberry Pickle you will need :-

12 oz of cranberry (fresh)
1-1/2 cup sugar
3-4 tablespoon pickle masala ( available in Indian grocery store)
2 tablespoon oil

Take a pan and add washed cranberries to it. Put the flame on medium heat. Allow cranberries to cook till they soften it. Mash little bit with spatula. Add sugar to it and cook it. Cook till it form 1strand of sugar syrup. Cook it for a minute and then put off the flame. Allow the mixture to cool down completely. Add pickle masala and oil to it and then mix well. Store this pickle in glass jar and put it in a refrigerator and use it when needed. It can stay in a refrigerator for about 3-4 months.

Bhakri

Bhakri is one of my favorite flat bread.

To make Bhakri you will need :-
3 cups of Bhakri flour (available in Indian grocery store)
3-5 tablespoon of oil
Salt to taste
Water as needed
Ghee as needed

Take a big bowl and add bhakri flour to it. Add salt and oil to it and mix well. Then start adding little water at time and make a hard dough. Roll it several times to make it smooth. Allow it to sit for 10-20 minutes. After that make a small ball out of dough and roll it round.

Heat up griddle or roti pan and then roast it on low to medium flame on both sides. When you see spots on both sides, then take out with thongs (steel) and then roast it on gas both sides.

Apply ghee on warm bhakri. You can serve it warm or at room temperature. They can stay good at room temperature for 2 days.

You can serve with dry subji or with curry.

Vegetable Chilla

 I am trying lot of variety of chilla these days so that I can pack lunch box ahead of time.

To make Vegetable Chilla you will need :-
1 cup of gram flour
3-4 tablespoon rice flour
2-3 small red reddish shredded
2-3 tablespoon carrot shredded
Salt to taste
1 tablespoon yogurt
1/4 teaspoon red chilly powder
1/4 teaspoon turmeric powder
Cilantro chopped (optional)
1-2 tablespoon onion shedded
Oil as needed
Water as needed

Take gram flour and rice flour and add salt, red chilly powder, turmeric and little water. Make a smooth batter, Add yogurt and all shredded vegetables to it. Mix well. Allow it to sit for 10 minutes. Heat up non stick griddle and add oil on it and when the griddle gets hot add 2 laddle of batter on it. Cook it on one side and flip it and cook other side. Serve warm with tea, chutney or ketchup.

Mung dal Chilla

To make Mung dal chilla you will need :-

1 cup mung dal washed and soaked in water
1/2 teaspoon ginger chilly paste
Salt to taste
Oil as needed
Water as needed
2 tablespoon gram flour

Add soaked mung dal in grinder and make a smooth paste. Add ginger chilly paste, salt and water if needed. Make batter like dosa. Heat up non stick griddle and add oil on it and spread it. Add 2 laddle of batter and spread it. Add oil on top of it if needed. Flip it after it gets cooked on one side. Cook it on other side. Serve hot with tea or chutney.

Mung dal dhokla

Hey guys today its raining and I thought of making something healthy snack which I can enjoy warm with my tea.

To make Mung dal dhokla you will need :-
2 cups split mung dal with skin
water as needed
Salt as needed
2 teaspoon ginger chilly paste
Oil as needed
Steamer
1 teaspoon sesame seeds
1 teaspoon red chilly powder
4-5 curry leaves
1 teaspoon mustard seeds


Wash mung dal and soak it for about 2-3 hours. Grind in a mixture to make a smooth paste. Add water if needed for grinding. You have to make batter like dhokla. Not too runny. Add salt and ginger chilly paste. Take steamer and add water and put greased tray with batter inside steamer and cover lid and steam it. You can use butter or oil for greasing.
Allow it to cook completely, it takes about 10-12 minutes on medium flame. After that remove carefully and allow it to cool.
Make pieces of it and then in small pan make a tempering of it and then add mustard seeds to it and when it start to crackle add curry leaves (be careful with it) and then sesame seeds and pour it on dhokla.
Your dhokla is ready to serve.
