Chutney Sandwich

Hey guys this is easy sandwich which can be made in minutes if you have very less time and your coriander chutney is ready with you. I have tasted this in ahmedabad. This chutney sandwich is available at most of the sandwich places in ahmedabad.

To make Chutney Sandwich you will need :-
2 tablespoon chutney
Butter as required
2 slice of bread
Chat masala as required

To make chutney you will need
Salt to taste
1 teaspoon cumin powder
3-4 green chillies
2 bunch of roughly chopped cilantro/ coriander (washed)
1/4 cup peanuts
Lemon to taste

Grind everything in blender and make a chutney. You can freeze it for 1-2 months.

To make chutney sandwich apply little butter on both sides of bread. Apply chutney on top of it and spread evenly. Sprinke chat masala on top of it. and cover it with other slice and enjoy.

Roasted Red Skin Potatoes- (Side Dish)

I tried with roasted red skin potatoes and it turned out really good. I tried with 2-3 types of flavoring  but I am sharing the one which I like the most.

To make Roasted Red Skin Potatoes you will need :-

5-6 medium size red skin potatoes washed
Salt to taste
1 teaspoon red chilly flakes
1/2 teaspoon mixed herbs
1/2 teaspoon black pepper powder
1-2 tablespoon oil
1/2 teaspoon garlic powder
1/4 teaspoon onion powder

Take potatoes and cut into cubes. Take it in baking tray and and add all the spices and oil and mix it well. Keep it in toaster oven on medium temperature.Roast it very slowly. Turn them often after 4-5 minutes. After they get cooked properly put it in broiler mode till you get brown spots on them. Turn of the toaster oven. Remove carefully from tray and serve warm or at room temperature.

Rice Krispies Chevda

Hey guys I am posting after a long time. I am back with easy and quick version of chevda.

To make Rice Krispies Chevda you will need :-
Oil as needed
Turmeric powder as per taste
Red chilly powder as per taste
6 cups of rice krispies (any brand)
Salt to taste
Sugar to taste (optional)
6-7 curry leaves
1/4 cup of peanuts (raw)
1 teaspoon mustard seeds

I like my chevda sweet so I little sugar. Take a pan and add oil to it and add mustard seeds to it. Add peanuts when the mustard seeds starts to crackle. Add curry leaves, be careful while adding it and cover immediately with lid as it splutter. Roast peanuts and add turmeric powder to it. Add rice Krispies and add sugar, salt and red chilly powder. Mix well and roast it for atleast 1 minute. Remove pan from stove and allow it to cool. After that keep chevda in airtight container and enjoy with tea or coffee.

Grilled Paneer

This is very simple recipe and also you can feed your kids if they like it.

To make Grilled Paneer you will need :-
1 cup paneer cubes
Salt to taste
1 teaspoon butter if needed
1/4 teaspoon pepper powder (optional)

Take griddle and put it on stove and make it little war. Then keep paneer cubes and place it on griddle and roast it. Roast it on both sides. Allow brown spots or little darker color on it. If required add little butter to it. Remove from flame and add salt to it. 

Corn, Fenugreek and Zucchini Handvo

I have earlier shared you recipe of handvo already. Please take basic soaking the batter and other ingredients used in that. Just add vegetables as Corn, Fenugreek and Zucchini in it. This combination gives very good taste to it.

I shredded fresh corn in batter. I used 2 corn for that after removing husk.

Leftover recipe with vegetables

Hey guys let me share with you new recipe which I made it and it turned out so great with my leftover sandwich sauces and we all loved it. I had some sriracha sauce and sweet onion sauce left over from my sandwich dinner party and they were in very less quantity so I thought of making something new with that.

Roasted Brussels Sprouts, Bell Pepper and Onion
2 cups Brussels sprouts
1 cup bell pepper
1 cup onion
Salt to taste
1 teaspoon black pepper
1 teaspoon olive oil
4 teaspoon sweet onion sauce
2 teaspoon sriracha sauce

Take a pan and mix all ingredients except oil. Add all the vegetables on baking tray and add oil on top of it and then cook in toaster oven for 5-6 minutes and then broil it for 2-3 minutes. Your veggies are ready to serve after that. Serve hot or warm.


Roasted Brussels Sprout

Hey guys I am back with my new recipe after a long time. I was busy and was not able to write it for a long time. I tasted roasted Brussels sprouts in one restaurant. I twisted recipe little bit and made my version of it.

To make Roasted Brussels Sprout you will need :-
4 cups brussels sprouts chopped into half and washed
1 tablespoon itialian salad dressing
Salt to taste
1 teaspoon black pepper powder
1 teaspoon chilly flakes
1 teaspoon olive oil
1 teaspoon lemon juice

Take a pan and mix all the ingredient except lemon. Keep it aside for 10 minutes. Take all the Brussels sprouts in oven tray and spread evenly. I did it in toaster oven (mini oven). I first did medium temperature for about 5-7 minutes and then carefully take it out and mix well and then broil it for 3-4 minutes. Add lemon juice on top of it. Carefully take out tray while turning off oven and then serve immediately little warm.
It is good side dish with pasta and soup.

Gujrati Dhokla

I thought of making gujrati dhokla today. Dhokla flour is available in Indian Grocery store. 
Note - The image is shown of dhokla after I made tempering of oil and red chilly powder after its done and cut into pieces.
To make Dhokla flour you will need :-
2 cups dhokla flour
1/2 cup yogurt
Salt to taste
Sugar to taste
1 tablespoon ginger chilly paste
3-4 tablespoon oil
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder
Water as needed
Eno as needed

Take a bowl and add dhokla flour and yogurt and water as needed to make little thick pouring consistency batter. Cover it with lid and then allow it to sit for 3-4 hours. After that add all the spices and mix well. Add oil and heat up and add mustard seeds to it to make tampering of it. Add to batter, aslo add eno 1/2 teaspoon to it. Mix well. Greese the dhokla plate with oil and pour the batter. Put dhokla plate in steamer and steam till it gets cooked. Cook on medium flame. After that remove carefully from steamer and then make pieces of it and enjoy with chutney.

Orange and Beetroot Juice- Baby Food

 As earlier I shared Pineapple and Beetroot juice, the method is same just take orange juice instead of  Pineapple juice and mix with beetroot juice.

You can adjust proportion  of  orange and beetroot juice as per your child preference. This is best way to feed them beet.

Pineapple and Beetroot Juice- Baby Food

When you want to feed your child beetroot in a way that they don't bother about taste, make this yummy juice.

To make Pineapple and Beetroot Juice you will need :-
1 cup pineapple juice
3-4 tablespoon beetroot juice 
Sugar if desired
Salt to taste

Take pineapple juice and beetroot juice and mix well. Add salt and sugar if needed. Your baby will love this juice for sure.

Beetroot Raita

 Today I will share with you very simple recipe of  beetroot raita. It can be made in minutes and adds an extra dish when you do not have much time to make lengthy recipe.

To make Beetroot Raita you will need :-
2 teaspoon shredded beet
 Salt to taste
Pinch of cumin powder
1 cup yogurt

Take a bowl and add yogurt and beetroot and mix well. Add salt and cumin powder and mix. Enjoy chilled.

Coconut Chikki

I have earlier shared recipe of the til (sesame seeds) chikki, the process is same just you do not have to roast coconut and use coconut flakes (dry) instead of til.

It tastes so good, you can also give it your kids as this is very healthy.

Note :- Please refer sesame seeds chikki  to make coconut chikki. The measurement is same, just the ingredients changes. You can also make of dalya, peanut,etc.

Til (Sesame Seeds) Chikki

Hey guys I am back with my new recipe.

I am making very easy recipe of Til Chikki

To make Til Chikki you will need :-

1 cup jaggery
1 cup roasted sesame seeds
1 teaspoon ghee
Water as needed

Take a pan and add ghee to it and then add powdered or crushed jaggery to it. Stir it continuously on low to medium flame till the mixture is bubbling and change its color to little dark brown, then add sesame seeds to it and mix it well. Transfer this mixture to aluminium foil and let it rest little bit. Cut it in desired shape or leave it like that and when it gets cooled off completely then just lift it and make pieces out of it. It stays good for about a week at room temperature.

leftover pizza dough- Aloo Kulcha (Potato Stuffed Flat Bread)

I had some leftover pizza dough and leftover potato masala from my aloo paratha. 

To make Aloo Kulcha roll pizza dough using rolling pin and all purpose flour and put potato mixture in it and cover it and roll again. Preheat oven for about 5 minutes and then put this aloo kulcha in oven at 250 degrees for about 5 minutes turning over. Cook till you see golden spots on it. Take it out carefully and then serve with a dollop of butter on top of it.

Calzone

I had leftover pizza dough and I thought of making Calzone out of it. I have made the recipe very easy and can be made in minutes.

To make Calzone you will need :-
1/4 cup chopped onion
1/4 cup bell peppers
1/2 cup cheese
1/2 cup ketchup
Salt to taste
Butter as required
2-3 olives chopped (optional)
Pizza seasoning as per taste
Parley as per taste

Take a pizza dough and roll it using all purpose flour and rolling pin. Preheat oven for 10 minutes. Meantime on rolled pizza dough apply ketchup, onions, bell peppers, olives, salt and pizza seasoning. Fold it moon shape and seal the sides and slit on top little bit for air to pass. Apply butter, parsley and pizza seasoning and then bake it in oven at 325 degree for about 15-20 minutes or till it gets cooked from both sides. Allow it to cool down little bit and serve hot.

How to freeze mango pulp

I love mangoes and like to make variety of items from it. 

Take ripe mangoes and then wash it and peel it, make small pieces of it keeping away seed of it. Add to blender and blend it till smooth. Put this pulp in airtight container and freeze it in freezer. Before using it just take out container before 4-5 hours and then you can use it. Put remaining pulp back to freezer otherwise it will become little dark in color. 

Dudhpak (Milk Dessert)

Dudhpak is traditional recipe in which milk and rice is combined with sugar and some other ingredients to make it very rich dessert. It is served with malpuva or poori.

To make Dudhpak you will need :-
8 cups of milk
2-3 cups of sugar
5-7 saffron strands
1/2 cup rice
7-8 almonds
2 teaspoon charouli (available in Indian grocery store)

Take a pot and add milk, and washed rice to it and bring it to boil and then add sugar to it. Add saffron to it. Now add almond soaked in water for few hours. Make sleeves of almonds. Also add charouli at that time and allow milk mixture to boil till rice cooks and milk gets little thicker. Always keep flame to medium or low. Stir in between. Allow it to cool down.
Serve warm or at room temperature with poori.

Bagel Pizza

This is quick appetizer or lunch when you do not want to spend more time in cooking. I had some leftover everything bagel and thought of making something interesting out of it.

To make bagel pizza you will need :-
3 bagels
1/2 cup ketchup
1/2 cup chopped onion
1/2 cup chopped bell pepper
Olives as per taste
Jalapeno as per taste
Salt to taste
1 cup cheese
1 teaspoon mixed herbs

Take bagel and cut it in half and then toast it little bit. Then put the bread side up on griddle and then apply ketchup, onion and bell peppers on top of it. Sprinkle salt and mixed herbs as per taste. Add cheese and cover it with lid till cheese melts. Serve hot.

Tip of the Day- Baby Vegetable Puree

Hey guys if you know a child or you have who has problem eating vegetable puree than try this trick so that your baby can get enough vegetables in her meal.

I have already shared baby vegetable soup or puree and in that add 2-3 teaspoon of puree of any fruit which your child likes. I added mango pulp to vegetable puree and it was liked by my son so much that he started eating vegetables puree.

I have also tried with apple, black grapes, peach and plum puree, just mix according to your baby's taste in vegetable puree and they will love to eat it.

How to freeze masala poori

I had some guest coming over this weekend and thought of making stomach filling breakfast for all. So I thought of freezing some masala poori. I made some masala poori a day before and freezed them.

To freeze poori you will have to roll poori not too thin and not too thick and then keep each of them between parchment paper and then put it in ziploc bag and freeze it in freezer for about 15-20 hours. When you want to use this just take them out and microwave it for about 20-30 seconds and then fry these poori in oil. They will puff up. 

Enjoy warm or at room temperature with cup of tea and some pickled green chilies.
