Opo- Squash and Patra Subji

When I do not feel like cooking much I try to make food which is on hand or use leftover to make a new one. Today I had Opo- Squash ( Lauki/Dudhi) subji as leftover. My mother makes this subji often and it is liked by everyone in our house.

Just add frozen patra (available in Indian Grocery Store) to the Opo-squash subji and little bit of water and cook it some time and your subji is ready. Add patra just before serving otherwise it will loose its shape and will not taste good. Add chopped coriander on top of it to make it more flavorful.

Coconut and Nuts ladoo

Hey guys Diwali is approaching and I thought of making something quick and although healthy as sweet dish. I checked out things which I have on hand and quickly made this yummy ladoo. Moreover there is no butter (ghee) or any sugar added in this ladoo.

To make Coconut and nuts Ladoo you will need :-
4-5 tablespoon dry coconut
1 tablespoon cashew
10-12 pitted dates (washed properly)
1-2 fig
3-4 tablespoon golden rasins

Take all the ingredients and make small pieces of it except coconut. Add all this to mixture jar and blend till it gets crumbly mixture. Churn according to your liking.  Take this to a bowl and make ladoo the size you want. I like to make a bit size ladoo so I made it small.

Note :- You can also add coco powder or some chocolate syrup if you like.

Sweet Boondi

Last week I had some guest  to come over. I was thinking of making sweet dish at home. Then on searching I found that sweet boondi can be prepared. I had some left over gulab jamun and then I thought of mixing sweet boondi and gulab jamun and it taste really good. I have tasted such combination in India.

To make sweet boondi you will need :-

1 cup besan ( chickpea flour)
Water as needed
1 cup sugar
3/4 cup water (for sugar syrup)
4-5 strands of kesar
1/4 teaspoon cardamom powder
Oil for frying

Take a bowl and add besan to it and then add water as needed to make pouring consistency batter. The batter should be such that it should go down from spatula which has hole in it (jharo in India). Keep oil on wide pan and when the oil gets hot then take this spatula which has hole and pass this besan mixture from it. Do not overcrowd them. Be careful so that you do not burn. Then turn them after some time and when it gets cooked then keep it aside after taking out from oil with the help of spatula.

For making sugar syrup add sugar and add water till the sugar gets dissolved. Put it on flame and mix well. Allow it to boil. Then add cardamom powder and kesar to the sugar syrup.

Add all the boondi to sugar syrup and mix well. Soak boondi till 1-2 hours. After that it is ready to serve. It can stay good for 1 day at room temperature after that it stays good for 3-4 days in refrigerator.

Khichu (Papadi No Lot)- Microwave Recipe

I just love Khichu. Navratri is approaching and at that time in India at most of the navratri spot, khichu is available. I use to enjoy a lot during that time. I tried the easy version of Khichu in microwave.

To make Microwave Khichu you will need :-

1 cup of rice flour
2 cups of water
1/4 teaspoon cumin seeds
1/4 teaspoon sesame seeds
Salt to taste
1 tablespoon oil
1 teaspoon green chilly chopped
1/4 teaspoon carrom seeds
1 microwave bowl

Take a microwave bowl and rice flour and all the dry ingredients and then mix well. Add water and oil and then mix well. Put in microwave for about 2 minutes. Take it out and mix well. Do this procedure at every 2 minutes till the rice flour gets cooked. (My microwave took 6 minutes). Allow it to cool down  little bit and then enjoy.

Note :- Be careful while handling the microwavable bowl it might be hot so do not burn yourself.

Tip of the day- Spicy Puffed Rice (Mamara)

Hey guys it is raining today over here and it feels so amazing that I like to had something warm in my morning breakfast. I checked my Puffed Rice (Mamara) and thought of making little warm. 

I just took a microwavable bowl and then put mamara in microwave for 10 seconds (time may vary as per your microwave) and it became warm to enjoy in my breakfast.

Tip of the day- Making sandwich tastier

Hey guys I am back with my new tip. I try to make different sandwich at home with the toppings and spread which I like. Yesterday I tried with hummus and coriander chutney and it turned out too good. I also like tomato and avocado sandwich.

To make all these sandwich I always add little chaat masala to my spread or sprinkle it. It gives a unique Indian taste to all the sandwich.

Try this and you will surely love your sandwich.

Watermelon Juice

Fresh fruits refresh us and if fresh juice is made out of it than we can enjoy at anytime in lunch or dinner. Last weekend I had some friends at my place and I planned to make watermelon juice so that it can accompany in dinner with pav bhaji.

To make Watermelon juice you will need :-

4 cups of watermelon roughly chopped
1/4 cup water if needed
Salt to taste
Chaat Masala as per taste
1/2 teaspoon cumin powder

Take watermelon pieces to blender and then blend it. Drain juice out of strainer. Then add salt, chaat masala and cumin powder as per your taste. Serve cold. You can also freeze it for a week.

Note :- If you are making it for vrat then you can avoid salt, chaat masala and cumin powder.

Paneer Bhurji Roll

Festival season has started and many people come and meet each other. Last weekend I have guest and I thought of making something unique although of traditional Indian taste. I here tried easy version of using Rasoi Magic Masala Mix of Paneer Bhurji. I thought of making Paneer Bhurji Roll which I use to eat often in my home town in India. One of the local bakery prepared such different kind of roll and they were so yummy. I thought of making the same way and it turned out really good.

To make Paneer Bhurji Roll you will need :-
1 packet of rasoi magic paneer bhurji masala mix
500 grams of paneer  cut into very small pieces
1 big bell pepper chopped
1 tomato chopped
1 cup onion chopped
1 teaspoon cumin seeds
Pinch of turmeric
3-4 tablespoon oil
4-5 hotdog buns
Ketchup as required
Pinch of salt (if required)
1/2 cup Onion and Bell pepper slices
Butter for roasting bread

Take a pot and oil to it. Add cumin seeds and allow it to crackle. Add chopped onion and saute it for some time. Add chopped bell pepper and tomato and saute it till it gets tender. Add to your taste paneer bhurji masala mix of rasoi magic. Add turmeric and mix well. Add chopped paneer and mix well.  Take out of stove. Now take a hotdog buns/ bread and then apply butter on both sides and roast on pan till little golden brown spots are seen. Now take out of flame. Apply ketchup as required on both sides of bread and then put paneer bhurji mix  about 3-4 tablespoon and top it up with onion and bell pepper. Do try this easy and yummy recipe.

Tip of the day - Mix-match of Papad

I had guest this weekend and I had prepared full Gujarati dish and then at last I started roasting papad.  I had only 2 of them of plain and more with black pepper. I thought lets mix and match papad.

I had also some garlic papad then I made my mind to roast plain, black pepper and garlic papad and make pieces of it and mix it. Nobody asked for the specific variety and all guest enjoyed this mix and match.

So whenever you ran out of stock of something think and there will be new way of serving the same dish.

Tip of the day- When you ran out of pomegrante seeds....

I prepared Dabeli (already shared recipe) last night and when I went to store to have some pomegranate to add in my dabeli, I didn't find any of the size which I want. All were so big that only 1/4 portion I would have used it.

So then I thought of adding black or red grapes to it. To my surprise the taste came so near to pomegranate. So if you ran out of pomegranate seeds then if you have on hand red or black grapes then cut them into very fine pieces and use it in your dabeli.

Sev Khamani (Easy)

Hey guys I am back with my new recipe and this time its really easy one. Whenever we think of making something new we always have a back in our mind that how much time it will take and how it will taste? But this easy version of sev khamani you will surely like it.

To make Sev Khamani you will need :-
250 grams of Instant Khaman Mix
Pinch of salt
Pinch of sugar
4-5 tablespoon water
1/4 cup chopped coriander leaves
1/2 cup pomegranate seeds
1 cup sev
1 teaspoon mustard seeds
4-5 tablespoon oil
3-4 curry leaves
Shredded Coconut (optional)
1 tablespoon ginger chilly paste

Make khaman as directions given in Khaman Instant Mix ( I used Talod Khaman Mix). Allow it to cool down little bit. Now break unevenly and make a very fine pieces of it. Keep it aside. Now take a pot and add oil to it. Add mustard seeds and curry leaves and allow it to crackle. Add ginger chilly paste and saute little bit. Add Khaman fine mixture to it. Add salt and sugar if desired. Sprinkle little water on it so that it becomes moist. Add coriander leaves and pomegranate seeds and mix well. Add sev on top of it while serving. Serve hot or at room temperature.

Note :- I have not added shredded coconut as I do not like it but you can add if you like.

Leftover Recipe- Cauliflower Pulav

I always try to make the most use of the leftover food. Yesterday I had leftover cauliflower subji. I thought of making something new out of it. I evaluated different ways of using it a little and thought in which it would will fit good either to make cauliflower paratha or to add in pulav and mix well.

Make pulav (already shared recipe) then add cauliflower subji to it and mix well. For more flavor add chopped coriander leaves and then mix well. It will taste so good that nobody will recognize that you have added the cauliflower subji to make it. 

You can also make pulav with the other subji like green beans, cabbage and carrot. Try this some day and you would love it and the leftover subji can be used in great way.

Frozen Strawberry

Strawberry are great source of energy. Many new different dishes can be made from strawberry. Strawberry pie, smoothie, milk shake, lemonade, short cake, etc. 

Take fresh strawberry then take out green leaf out of it and then wash it thoroughly. Take out of the water and pat dry all the strawberry. Take a paper towel and then allow it to dry. Take them to a plate after it is completely dried out and then put it in refrigerator for 10-15 minutes. After that put all the strawberry in Ziploc and then take out air completely and then put it freezer. It can stay good for more than 3-4 months.

Spaghetti in White Sauce

Sometimes we need new things to eat so that we can enjoy our food and it just helps in changing our taste buds. To make Spaghetti in white sauce you will need :-

To make Spaghetti in White Sauce you will need :-

1 cup of boiled spaghetti
2 tablespoon all purpose flour
3-4 tablespoon butter
Salt to taste
1 teaspoon sugar
2-3 tablespoon frozen corn
1-1/2 cup lukewarm water
1/2 teaspoon black pepper
1-2 tablespoon chopped green bell pepper

Take a pan and add butter to it. Add all purpose flour and saute it. Add milk to it and add salt and sugar. Mix well. Allow it to cook well till it thicken. Add black pepper and mix well. Add corn and bell peppers and mix well. Add boiled spaghetti to it and mix well. Serve hot.

Add chilly flakes and ketchup if required on top of it before serving.

Upma

Healthy breakfast is very good to start in morning. It gives us energy all the day. I like to make quick recipe. Today I made Upma so that it gives us good day to start on.


To make Upma you will need :-

1 cup semolina
2 cups of water
3-4 tablespoon frozen peas
3-4 tablespoon frozen corn
Salt to taste
3-4 teaspoon oil
2-3 teaspoon yogurt
1 green chilly finely chopped
1 tablespoon mustard seeds
2-3 teaspoon coriander leaves
3-4 tablespoon onion finely chopped 
1-2 tablespoon carrot chopped

Take a pan and add oil to it. Add mustard seeds and allow it to crackle. Add finely chopped onions and carrot and allow it to saute. Add green chillies and saute it for some time. Add semolina and roast it. Add salt, peas, corn and mix well. Add yogurt to it. Add water and mix well and allow it to cook for 2-3 minutes and cover it with lid. Add coriander leaves and serve hot. You can also add bell pepper and green onions if desired.

Chana Chaat

I like to make chaat in different ways. It just spice up your taste buds and feels like something good you have eaten. I always make chaat in different ways.

To make Chana Chaat you will need :-
1 cup kala chana (boiled)
3-4 tablespoon onion chopped
3-4 tablespoon tomato chopped
1/2 lemon juice
Pinch of coriander cumin powder
Pinch of red chilly powder
Salt to taste
Pinch of chaat masala
1/4 teaspoon cumin powder
2-3 tablespoon coriander leaves chopped

Take a bowl and add boil chana, onion, tomato, lemon juice, coriander cumin powder, red chilly powder, salt, chaat masala, cumin powder and mix well. Add coriander leaves and mix well. Serve as tea time snack.

Frankie (Vegetable)

Vegetable can be served in many different ways. You can name it as vegetable burrito or frankie it is the same thing. I made tortilla at home and try to add new taste to my vegetables.

To make Frankie you will need :-
1 cup finely chopped cabbage
1 cup finely chopped onion
1/2 cup finely chopped bell pepper
1/2 cup finely chopped carrot
Salt to taste
1 teaspoon ginger chilly paste
2 teaspoon ketchup
1 teaspoon soya sauce
1/4 teaspoon red chilly sauce
Butter for roasting
2 teaspoon oil

Take tortilla (already shared recipe) and apply little butter on both sides and roast little bit. Keep it aside. Now heat up pan and add oil to it. When oil gets hot add all the vegetables and roast it for 3-4 minutes till it get tender. Do not cook it full. Add salt, ginger chilly paste, ketchup, soya sauce, red chilly sauce. Mix well. Allow it to cool down little bit. Put 2-3 tablespoon of vegetable mixture and roll in tortilla and then roast in panini maker or grill pan so that grill marks come on it. Serve hot.

Strawberry Smoothie

Berries are good source of energy. It can be combined with any of the dessert and it just change the taste and it always carry to higher next level. Hot summer days are going on and we should have something cold so that it can get us cold.....

To make Strawberry Smoothie you will need :-

2-3 strawberry medium size (washed and leaf taken)
1/2 banana chopped
2-3 tablespoon milk
1 cup yogurt
Sugar to taste (if required)

Take a blender and add strawberry, banana, milk and yogurt. Add sugar to taste if required. Churn them properly. Add ice cubes and churn then if you want it to be chilled. Add few pieces of strawberry if you like. Serve chilled.

Mango Milkshake

Mango is king of all fruits. I love in every form like raw and ripe. I always try to variate with mangoes and make new recipe. Today I am sharing very basic recipe but it is still loved most by us.

To make Mango Milkshake you will need :-
1 teaspoon sugar
1/4 cup of chopped ripe mangoes
1 cup milk

In a blender add mango, sugar and milk and churn them properly. Add ice cubes if you want to make it chilled. Serve chilled in hot summer days.

Dudhi (Opo Squash/Bottle Guard) Paratha

Dudhi Paratha (Dhebra) is prepared in my house since years. It taste so good and it is loved by everyone. It can be made with bajri flour, wheat flour or by mixing them both. It can be used by using green chillies or you can use red chilly powder.

To make Dudhi Paratha you will need :-
1 cup shredded dudhi
1 cup wheat flour
1/4 cup bajri flour(millet flour)
Salt to taste
2 tablespoon sesame seeds
3-4 tablespoon yogurt
1/2 teaspoon red chilly powder
1/4 teaspoon turmeric powder
2-3 tablespoon oil
Oil for roasting
Water as needed
1 teaspoon carom seeds

Take a bowl and add wheat and bajri flour to it. Add salt,shredded dudhi red chilly powder, sesame seeds, turmeric powder, oil, yogurt and carom seeds to it. Mix well. Your dough should be not too stiff not too soft. Add more flour (wheat) if your dough is not too stiff. Add water if your dough is too stiff. Cover it with lid and then allow it to rest for half an hour. After resting dough make small ball like golf size of dough and then roll it. Use wheat flour if you find it difficult to roll it. Heat up skillet and when it gets hot apply little bit oil and then roast paratha on both sides. Apply oil on both sides and roast. You can store it for 1-2 days at room temperature.

It is good snack at picnic or to carry out.

Guacamole with Mango

I love mexican food and I like to make it at home. Raw mango taste good when they are added in any dip or salsa. 


Just add small pieces of raw mango to the guacamole (already shared recipe)  and mix well and enjoy. It surely brings some tangy taste when we have a bite with our favorite chips.

Potato and Dudhi (Bottle Guard/ Opo Squash) Subji

I like to try new combinations for the same vegetables we use in our daily diet. Today I made very simple subji which is loved by my grandfather.

To make Potato and Dudhi Subji you will need :-
1 cup diced dudhi
1 cup diced potato
Salt to taste
2 cups of water
1 teaspoon mustard seeds
2 teaspoon oil
1 teaspoon coriander cumin powder
1 teaspoon red chilly powder
1/2 teaspoon turmeric powder

Take a pot and add oil to it. Add mustard seeds and allow it to crackle. Add diced potato and dudhi to it. Add water to it. Add salt and turmeric powder and mix well. Cover it with lid and cook it. Add all the spices when potato and dudhi gets cooked. Serve with roti, paratha, bhakri, etc.

Rose Lassi

In summer we need something to cool off. I use to have Rose Lassi in India and there it was served with a cream on top or with dry fruits on top of it. I like to make it simple so I made it my style of Rose Lassi.

To make Rose Lassi you will need :-
1 cup of yogurt
1-2 teaspoon rose syrup (Roohafza)
1-2 teaspoon water (if needed)

Take a pot and add yogurt to it. Add roohafza to it and blend it. If desired add more teaspoon if you like strong flavor. Blend it till it get mixed properly.
 You can also add rose petals if desired. You can also add dry fruits if you like it to make it more flavorful.

Onion Bell-Pepper Subji

When I run out of the things on hand or when I want to make something new I just check my refrigerator and create new out of which I have on my hand. Today I tried with Onion Bell- Pepper subji.

To make Onion Bell Pepper Subji you will need :-
1 big onion diced
1 big bell pepper diced
Salt to taste
2 tablespoon oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder
1/2 teaspoon coriander and cumin seeds
3-4 tablespoon chopped cilantro

Take a pot and add oil to it. Add cumin seeds and allow it to crackle. Add diced onion and saute it till it get tender. Add bell peppers and allow it to cook till it get tender. Add all the spices and mix well. Add chopped cilantro and serve with roti or paratha.

Left over recipe- Cucumber Pulav

I always try to use my leftover food in different way. I always try to make recipes which are simple, quick and easy and can be made with the ingredients which are available in home on your hand. I try to use the things which are available with me and make new recipes. 

To make Cucumber Pulav you will need :-
2 cups boiled basmati rice
1 teaspoon red chilly powder
1/4 teaspoon pulav masala
1/2 teaspoon turmeric powder
1/4 cup sliced onion
2 green chillies chopped
Salt to taste
2-3 teaspoon oil
1/2 cup diced cucumbers
1/2 cup tomatoes chopped
2 cloves of garlic chopped
Coriander leaves for garnishing
1 teaspoon cumin seeds

Take a pot and add oil to it. Add cumin seeds to it. Allow it to crackle. Add onions to it and also green chillies. Add garlic to it and saute it for a minute or so. Add tomatoes to it and then add cucumbers and saute it till it get little tender. Add all the spices and mix well. Add boiled rice and then mix well. Allow it to cook for a minute or so. Add coriander leaves and serve.

Banana Blueberry Smoothie

Summer is on and we need something so that we can remain cool. I just love all the berries. I try to make new recipe from the berries which are simple and easy to make. Smoothie is great source of energy.

To make Banana Blueberry Smoothie you will need :-
1 big banana
1 cup of frozen blueberry
1 cup of yogurt (plain)
4-5 tablespoon of milk

In blender add banana by making rough pieces, add frozen blueberry, plain yogurt and milk. Add ice cubes if desired. I have taken frozen blueberry and chilled yogurt so I have not added ice cubes. Churn them properly. Serve chilled.

Tortilla (Wheat Flour)

I love Mexican food. It is easy to prepare and with few ingredients you can make almost all the vegetarian mexican dishes. Earlier I use to buy tortilla from store, but thought of making this time at home. 

To make Tortilla (Wheat Flour) you will need :-
1/2 cup whole wheat flour
3/4 cup All Purpose flour
Salt to taste
1 cup water
2-3 tablespoon oil

Take a pot and both the flour, salt and oil. Mix well. Add water slowly little at time and then make a dough like paratha. Allow it to rest for about 10-15 minutes. Cover it with lid while dough is resting. Make small balls out of dough and roll it with the help of rolling pin. If required take more flour to roll it.  Now heat skillet on medium flame. When skillet gets hot place tortilla on it. Cook both the sides till light golden brown spots are seen on it.

How to freeze Blueberry....

I just love berries. It can be used to make juice, smoothie, ice-cream, flavored yogurt, as topping on ice-cream, in making cupcakes, pancakes,pudding, etc.

Wash blueberry and then pat dry them. Allow water to dry completely out of it. I had put them on kitchen towel till they are dry completely. Now take a Ziploc bag and put all the blueberry in it and then close it by removing all the air out of it. Place this bag in freezer. Blueberry will freeze in around 1-2 hours. 

It stays good for about 1 month in freezer. Just take out the amount of blueberry you want to use and immediately store in the way it is mentioned in above paragraph.

Blueberry Lemonade

Summer season is on and we need something refreshing everyday so that we can keep ourselves cool in this hot summer. Last week blueberry was on sale and I thought of making something which I have not made it before. I thought of making lemonade out of it and it turned out too good.

To make Blueberry Lemonade you will need :-

1/4 cup washed blueberry
3 cups of water
1 big lemon juice
Salt to taste
2 teaspoon sugar
1/4 teaspoon cumin powder

Take a mixture jar and add blueberry, water, lemon juice, sugar, salt and cumin powder and churn them. Now pass this mixture from strainer. Take to another container and refrigerate it and serve.

You can make this ahead of time for about 2-3 hours before serving. The color of lemonade looks so tempting that you cannot resist from having it!!!!

Roasted Masala Corn Cob

From last 2-3 week it is nice weather over here. It has been raining and clouds all around most of the days. This reminds me of India's monsoon season. We use to bring 7-8 corn cob and roast and boil and eat in rainy weather. I thought of doing same thing over here.

To make Roasted Masala Corn  Cob you will need :-

1 corn cob
Pinch of red chilly powder
Salt as required
1/2 lemon juice

Take out all the leaves layers of the corn. Now take this to the stove and roast by turning it over time to get roasted evenly on all the sides on low flame. Roast till dark spots are seen. Be careful while roasting it. Now take out of stove and then hold it with cloth or paper towel so that you don't burn yourself from hot steam out of corn cob. Cut half the lemon and remove the seeds. Put salt and red chilly powder and gently pressing it rub on the corn cob. Enjoy hot or at room temperature.

I like to serve when it is hot or when it is little warm. If you want to serve at room temperature then allow it to cool down after removing it from stove and whenever you want to eat at that time you can add masala on it.

I like to add Indian taste in my some of the recipes. I just love bread and always try to make new sandwich from it.

To make your sandwich more flavorful sprinkle chaat masala on vegetables and the sides of bread where you apply your ketchup, butter or any chutney. Try this and you will love to eat this sandwich as it will surely add more flavor to it.

Burger

Burger is loved by most of us. I like to make the food which I like in restaurant at home. My mother makes in India everytime burger at home. She always gives Indian taste to it. At home there is flexibility of taste. Everyone can make their own as per their choice by adding cheese, mayonnaise, chutney, mustard, etc.

To make Burger at home you will need :-

2 burger buns
3-4 teaspoon coriander chutney
5-6 tomato slices
3-4 onion slices
5-6 tablespoon ketchup
2 potato patties
Butter as required

Potato Patties
2 boiled potatoes
2 tablespoon bread crums
1/2 teaspoon ginger chilly paste
Salt to taste
Sugar to taste
1 teaspoon garam masala
Pinch of turmeric powder
Oil for roasting

Boil potatoes and then peel of the skin and all the ingredients except oil. Mix well. Make patties out of it. Take skillet and roast the patties applying oil on both sides. When they become golden brown color its done.

Take burger buns and apply butter on both the sides and roast them. Apply on one side coriander chutney then put a slice of tomato, place potato patti on top of it and then finish it with slice of onion. On the other side apply ketchup and then cover the other side.

You can also add cucumbers and lettuce if you like. I made it very simple.

Handvo Khichu

Gujarati food is full of variety. It can be twisted and with your own taste you can make it you like.  Handva khichu is made by my grandmother and she passed this recipe to my mother. This is my father's favorite so my mother makes this often.

To make Handva Khichu  will need :-
1 cup handva flour
2 cups water
2 tablespoon oil
2 cloves
1/2 teaspoon mustard seeds
Salt to taste
1 teaspoon red chilly powder
1/2 teaspoon turmeric powder
2 tablespoon yogurt
1/2 teaspoon cumin seeds
2-3 curry leaves

Take one teaspoon oil and mix with handva flour and make it moist.Take a big bowl and add oil to it. Add oil in it and add mustard seeds and cumin seeds and allow it to crackle. Add curry leaves to it. Add water to it and add handva flour. Add all the spices and yogurt to it. Mix well. Cover it with lid and allow it to cook for 5-10 minutes. In between stir well otherwise it will stick to bottom. When it gets cooked properly serve hot. Drizzle some oil on top of it before serving.

Fruit Sandwich

Fruits are great source of energy. I do not like it too much but I make many dishes from it so that I can have it in my daily meal. 

To make Fruit Sandwich you will need :-

2 tablespoon nutella 
1 ripe banana sliced
7-8 orange segments
2 bread slices

Apply nutella evenly on both the bread slices. Put ripe bananas and orange segments on it and close other side. Enjoy at room temperature or chilled.

You can also add strawberry, apples,pineapples, etc and make it the way you like.

Flavored Tortilla available at....

I was searching for something new and to my surprise I found out tortilla with different flavors. They look so fresh and yummy.

I found out Mission tortilla in  Garden Spinach Herb Flavor and Sundried Tomato Basil. It is stated as Wraps on it but its same as tortilla.

It is available in Ralphs (Kroger) and Walmart.

How to store Guacamole for long time

Last week Avocado was on sale and I thought of freezing them. I and my husband both love Guacamole and we enjoy with chips, burrito, and as spread on toasted bread, etc.

To store guacamole for long time first make guacamole (already shared recipe) and take it to airtight container. You can use pyrex or Rubbermaid container whichever you like. I stored in both the container (pyrex and rubbermaid). Freeze it in refrigerator for about a week or more. Store in small quantity and take out atleast 1 hour prior to use. In both the container (pyrex and rubbermaid) guacamole was in good condition, so you can choose container as per your choice.

Note :- I have not added tomatoes and onion while freezing it, that I added after it came to room temperature before use because it may loose some water or change the taste of guacamole.

Uttapam Sandwich

Whenever sandwich word occurs to your mind, it means bread and different vegetables and other stuffing of your choice. Today I will share you unique sandwich by using uttapam. I made very small size uttapam and added my favorite chutney to it.

To make Uttapam Sandwich you will need :-
6-8 small uttapam
3-4 tablespoon coriander chutney
3-4 tablespoon ketchup
1-2 teaspoon red chilly and garlic chutney

Take one uttapam and apply coriander chutney on it, on another either ketchup or garlic chilly chutney and make layers of it. Enjoy with a cup of tea or if you want to add vegetables of your choice then it can be served as meal in lunch or dinner.

Tip of the Day- Making Enchilada Sauce more flavorful

Hey guys I want to share you the secret of making Enchilada sauce more flavorful. It is very easy and you do not have to put more work to make it.

Just add tomato soup to Enchilada sauce to make it more flavorful. I tried it and it was loved by everyone. Just mix both the sauce as per your choice and you will see the difference in taste. It also gives little volume to the sauce.

Your enchilada will not dry up easily and it will feel juicy and more flavorful.

Mini Uttapam Appetizer

I had a left over Idli batter and I thought of making something unique for my afternoon snack. I thought of adding cheese because it is one of my favorite ingredient. So I prepared mini uttapam appetizer. I made it very simple with the ingredients I have with me on hand.

To make Mini Uttapam Appetizer you will need :-

6-7 mini uttapam (already shared recipe of uttapam)
2-3 tablespoon ketchup
2-3 tablespoon coriander chutney
1 teaspoon garlic chutney ( easily available in Indian Grocery Store)
Cheese as required

Take a plate and place mini uttapam and apply on one uttapam ketchup about 1 tablespoon, on another uttapam 1 tablespoon coriander chutney. Apply garlic chutney on another uttapam as per your need. Shred cheese on all the uttapam and serve.

Vaghereli (Masala) Idli

Whenever I have leftover Idli's, I always make this vaghereli idli. It tastes just too good. So let me not just talk about it and share you recipe....

To make Vaghereli Idli you will need :-

8-10 idli cut into diced shaped
Salt to taste
2-3 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon sesame seeds
1/4 teaspoon turmeric powder
1 teaspoon red chilly powder
3-4 teaspoon chopped cilantro

Take a pot and add oil to it and heat up oil. Add mustard seeds to it and allow it to crackle. Add sesame seeds and be careful they will splutter. Add idli and all the spices and salt to it. Mix well. Add chopped cilantro before serving.

Peas Pulav

I like to make the traditional recipe with the twist and although the taste should remain the same. I tried with peas pulav and it turned out good.

To make Peas Pulav you will need :-

1 cup basmati rice
3-4 teaspoon chopped cilantro
Salt to taste
5-6 tablespoon frozen peas
1 teaspoon ghee
1-1/2 cups of water

Take a bowl and add rice to it and wash it 3-4 times. Now in the broad pan add washed rice and add 1-1/2 cup of water, frozen peas, ghee and salt. Allow it to cook on low flame. When the rice gets cooked add cilantro and mix well. Your peas pulav is ready to serve.

Dahi Wada

Summer has started and I wanted something which can go very well in dinner. I thought of making dahi wada. Wada are made from urad dal. I have already shared recipe of urad dal wada.

To make Dahi Wada you will need :-
4-5 urad dal wada
6-7 tablespoon of yogurt mix
2-3 tablespoon tamarind dates chutney
Pinch of red chilly powder
Pinch of cumin powder
Water for soaking
Salt to taste
1/4 tablespoon sugar

Take a bowl and add urad dal wada and soak in about 1-2 cups of water for about 1 hour. When you want to serve take out all wada out of water and squeeze all the water by pressing wada. Keep it in another bowl. Now for yogurt mix add yogurt, sugar and salt in a small bowl and mix well till it breaks all lumps and sugar and salt dissolves. Now take serving bowl and arrange wada, add yogurt mix on it and sprinkle red chilly powder and cumin powder and serve.

I generally keep yogurt mix in refrigerator when I want to serve in summer. It gives coolness in hot summer days.

Vegetable Bhajiya (Dumplings)

I am big fan of fried food. Even though fried food is not too healthy I enjoy a lot. Last week it was very cloudy and I thought of making something fried for my lunch. I thought of making Vegetable Bhajiya adding my favorite vegetables to gram flour. 

To make Vegetable Bhajiya you will need :-

1 cup gram flour
2 teaspoon yogurt
2-3 tablespoon frozen corn
2-3 tablespoon carrot chopped
5-6 tablespoon onion chopped
Salt to taste
Oil for frying
Pinch of baking soda
1/4 teaspoon red chilly powder
Water as needed

Take a bowl and add gram flour, yogurt, carrot, corn, onion and salt. Mix well. Add water to make a batter not too thin just like you can make dumpling out of it. Add baking soda and mix well. In a frying pan add oil and when oil gets heat up add small dumplings with the help of spoon. Fry them at medium flame. When it gets cooked properly remove from the flame and serve hot with ketchup or chutney of your choice.

Ginger Chilly Paste

Hey guys I shared many recipes in which I mentioned about ginger chilly paste. Today I will share with you how to make ginger chilly paste and also to store it for long time.

To make Ginger Chilly paste you will need :-

1/4 cup ginger roughly chopped
12-13 medium size green chilies roughly chopped
2-3 tablespoon water
1/4 tablespoon salt

Wash ginger and chilies properly. Pat dry them. Remove the skin of ginger and roughly chop them. Take a grinder and add roughly chopped ginger and chilies and grind them to fine paste. Your ginger chilly paste is ready. 
If you want to store it for a month or so then add salt to it and mix well and freeze it in airtight container. When you want to use take out the container from freezer about 1-2 hours and you can use it then. Then freeze it again back.


Til and Valiyari Mukhwas (Sesame Seeds and Fennel Seeds)

Hey guys I like to make many combination using the same ingredients. I have already shared recipe of Fennel seeds mukhwas and Sesame seeds mukhwas in my earlier post.

To make Til and Valiyari Mukhwas you will need :-
1 cup Sesame seeds mukhwas
1 cup Fennel seeds mukhwas

Take a bowl and mix sesame seeds and fennel seeds mukhwas and store in airtight container. It stays good for 2-3 months. You can adjust quantity of sesame seeds and fennel seeds as per your taste.

Tip of the day (How to quickly ferment Idli Batter)

I had guest over weekend and I forgot to check weather and I was so confused because I was planning to make Idli and how it will get ferment in 6-8 hours on a rainy day!!!

I thought of adding salt immediately after I churned my dal and rice. I added a 1 teaspoon of salt in around 3-4 cups of batter and to my surprise it got fermented so fast that I was able to make fluffy idli after around 6 hours. So do try this in cool weather and it will surely works. 

Keep your batter in warm place like oven or microwave without turning it on. Even if the oven or microwave is not on with the help of salt it will ferment fast.

Til (Sesame Seeds) Mukhwas

In India different types of mukhwas are made at home. My mother always makes fennel seeds, sesame seeds mukhwas at home. I am not too fan of such mukhwas but I like the one available in market. My husband likes homemade mukhwas, so I started making it at home and now even I eat often such homemade mukhwas.

To make Sesame Seeds Mukhwas you will need :-

2 cups sesame seeds (available in Indian Grocery Store)
2 tablespoon lemon juice
1/4 teaspoon turmeric powder
Salt to taste

Take a bowl and wash sesame seeds very well with water 2-3 times because sometimes it may have dirt in it. Drain out all the water from it. Keep it to dry by spreading on cloth or paper napkin. Make sure that all the seeds are dry. Now take this dry sesame seeds and put in bowl. Add lemon juice, turmeric powder and salt to it and mix well. Keep it aside for about 2-3 hours. Then take a heavy bottom pan and roast these sesame seeds on very low flame. Stir it continuously till it get crispy. Be careful while doing this, because sesame seeds splutter a lot and these hot seeds might burn you. Now after all the seeds are properly roasted keep it aside to cool down completely. After it gets cooled down then store in airtight container. It stays good for about 2-3 months.
