Plum, Mango and Red Grapes Smoothie

I like to try new combinations of fruits and every time it turns out so good and I thought of using plums as they are in season. I used red plums for this smoothie.

To make Plum, Mango and Red Grapes Smoothie you will need :-

2-3 large plums chopped 
1 cup grapes
1 mango diced
Sugar as needed

Take all the fruits to blender and add little sugar if needed and ice cubes and blend. Enjoy on hot summer day. Add little water or orange juice if you want it little less thick.

Mango, Bluberries and Cantaloupe Smoothie

I made this smoothie when I had guest and they just loved it. I used Kent mangoes in it. 

To make it you will need :-
1 cup mangoes diced
1 cup blueberries
3 cups cantaloupe

Wash blueberries properly. Add diced mangoes and cantaloupe in it and then blend. Add orange juice for more flavor. Serve chilled.

Red Grapes, Banana, Cantaloupe and Strawberry Smoothie

I like to make smoothie for my snack. It is good source of energy when you have a glass of it in hot summer days.

To make you will need :-
1 cup grapes
1 cup strawberry
1/2 banana
2 cups cantaloupe

Take all the fruits and wash them properly. For cantaloupe peel it remove seeds and make cubes of it and then put in blender. Add other fruits too and blend. Pour in glass and enjoy. For serving chilled add ice cubes in blender.

Leftover Recipe- Onion & Tomato Puree

 I had some leftover chopped onion and tomatoes and I wanted to make best use out of it.

To make Onion Tomato Puree you will need :-
2 cups onion chopped
Water as needed
Salt as needed
2 cup tomato chopped

Take mixture jar and then add onion and tomatoes and churn them. For smooth paste add little water to it. Take it to plastic container and add little salt to it and mix well. Freeze it and it will be good for about week.

You can use it punjabi subji, making gravy for Masala Chole or even Indian style pasta.

Note :- Do not refrigerate,  freeze it in freezer.

Leftover Recipe - Detox drink ( cucumber)

Hey guys I like to share the things which I have tried and also the taste of which is very good.
I had some finely diced cucumbers as leftover with me so I thought of making detox drink out of it.

To make Detox drink of cucumber you will need :-

1-2 cups cucumbers
2-3 slices of lemon
3-4  cups of water

Take a jug and add water and cucumbers and mix well. Add 2-3 slices of lemon and if you want you can squeeze one slice of lemon. Allow it to rest for 2-3 hours and serve. You can also add ice before serving.

Note :- Drain cucumber and lemon slice before serving. 

Tip- How to use leftover green chilies

Green Chilies are used in our everyday food. I like spicy food and when it comes to green chilies I make most use of it.

I had bought some extra green chilies as I found this week little cheaper. I washed green chilies and made them completely dry and then took out seeds and made a rough chop and freezed it in container.

Also if you find that your chilies are going to stale in few days then wash them and cut them into large pieces and keep in ziploc bag in refrigerator and it will be good for about week. 

Tip- How to store leftover naan

 I had a party last week and I had some left over naan after distributing to friends. I thought of making good use of it.

When the party was over immediately I kept all the naan (butter) in a ziploc bag and kept in freezer. I am taking out naan as required and keep at room temperature for about 1 hour before using and it is still fresh. After one hour of resting at room temperature or 30 minutes, you can microwave or make it warm on griddle. I have tried both the methods, making warm in microwave and on stove top and it does not feel chewy to me. 

So go ahead and try to freeze your naan and use it for a week!

Note :- Please check naan every time before you eat or use it, if you find bad smell or taste is bad then do not use it.

Mooli Paratha (spicy)

I have earlier showed recipe of easy version of mooli paratha but I tried with this one and it turns out real good. This method is little lengthy but the paratha comes out really good.

To make Mooli Paratha you will need :-
1 cup diced mooli
1/2 cup roughly chopped onion
2-3 cloves of garlic
2-3 tablespoon coriander leaves
Salt to taste
2-3 teaspoon oil
1 teaspoon garam masala
1/2 teaspoon coriander cumin powder
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder
Roti atta as needed
Oil for roasting paratha

Take grinder and add mooli, onion, coriander and garlic to it and chop it very fine. In a pan add oil and add this mixture and allow it to roast. Add all the spices and mix well. Allow it to cool down completely. Take roti atta and roll small roti and fill about 1-2 tablespoon mixture into it and cover it and then roll it again using some wheat flour. Heat the griddle and then add paratha to it. Roast on both sides and then apply oil on both sides to roast it properly. Serve hot with ketchup or yogurt.

Mango Koprapak ( Ladoo)

I like to make dessert which are simple and although liked by everyone. I know for sure that everybody likes mango too much. 

To make Mango Koprapak you will need:-

2-3 cups of coconut (dry)
1 teaspoon cadamom powder
3/4 cup mango pulp
1 cup condensed milk
few strings of saffron
Milk as needed
1-2 tablespoon ghee

Take a pan and coconut to it. Roast upto 3-4 minutes on medium flame. Let it cool down completely. Add mango pulp, condensed milk and cardamom powder to it. Add saffron in 1-2 teaspoon milk and allow saffron to loose some color in milk and then add to the mixture. Mix all the things well and make ladoo. For fine finishing rub your palms with ghee and then roll it.

This will stay good at room temperature for about 1-2 days and after that in refrigerator till 1 week in airtight container.

Vegetable and Beet Soup

Hey guys I am back with new recipe of soup. This time healthy and very tasty recipe.

To make Vegetable and Beet soup you will need :-
1 cup carrot
1 cup tomato
1 cup beet
1 cup cauliflower
1 cup cabbage
Salt to taste
Sugar to taste
1 teaspoon black pepper

Wash all the vegetables and peel carrot and beet. Make dice of carrot, tomato, beet, cauliflower and big pieces of cabbage. Take pressure cooker and add all the vegetables. Add water about 6-7 cups or till all the vegetables are completely under water. Hear about 6-7 whistles. Let it cool down completely. Then add salt, sugar and black pepper as per your taste. Mix well and serve hot.

You can also add garlic and onion powder if you like.

Mexican Beans Chilies

I like to make recipes which are easy but tasty. Today I tried with these Mexican chilies.

To make Mexican Chilies you will need :-
2 Anaheim chilies (Long)
2 cups of Rosarita Refried Beans (Vegetarian)
2-3 tablespoon salsa
Pinch of salt
Pinch of cumin powder
Taco seasoning as required
1/2 cup finely chopped onion
1/2 cup finely chopped bell peppers
Oil as needed
Cheese as per your taste

Take 2 anaheim chilies and wash them and slit in from middle to make 2 long even parts. Remove all the seeds. Apply little oil on it. Take a bowl and add beans,salt, cumin powder, taco seasoning, onion and bell pepper to it as per your taste. Add salsa to it and mix well. Fill this mixture in cut chilies and spread some cheese on top of it. Bake it in mini oven for about 5-6 minutes or till the chilies gets tender. Serve war,

Adjust temperature of oven to medium as per your oven.

Vegetable Enchilada in Red Sauce

This is the easy version of vegetable Enchilada which can be made in within 15 minutes. I used store bought tins for beans and sauce and mixed some of the spices and my enchilada is done.
To make Vegetable Enchilada you will need :-
1 cup finely chopped onions
1/2 cup finely chopped bellpeppers
1 tin of Rosarita Refried Beans (vegetarian)
1 tin of Enchillada Sauce Red (Great Value-Walmart)
Salt to taste
Taco seasoning as needed
Pinch of cumin powder
Water as needed
Sugar as needed
Chilly powder as needed
1/2 cup finely chopped lettuce
6 large flour tortillas
Butter for roasting
Cheese for garnishing
1 small tin of Tomato puree
4-5 tablespoon of salsa

Take a pot and add beans to it and add taco seasoning as required and cumin powder  and salsa as per your taste.  Heat it on low flame. In another pot take enchilada sauce add salt and sugar as per your taste. Add 4-5 tablespoon of tomato puree to it. Add red chilly powder to it and taco seasoning. Mix well and allow it to boil.
 Roast tortilla with butter little bit on both sides. For assembling enchilada first take tortilla and apply enchilada sauce on both sides and then put beans mixture on it  and vegetables of your choice and roll it tightly. Similarly make all other. Place in large baking tray and pour some more enchilada sauce on it and top it up with cheese and put in oven for 10 minutes on lowest temperature. Remove carefully while turning off the oven and serve hot with salsa and chips.

Carrot and Tomato Soup (Baby Food)

To feed a baby is a task sometime. They also do not like same food everyday. 

To make Carrot and Tomato Soup you will need :-

1 big carrot diced
1 big tomato diced
Salt to taste
Water as needed
Pinch of sugar

Take a pressure cooker and add diced carrot and tomato after washing them properly. Add required water as per your pressure cooker. I generally add 3-4 cups of water and pressure cook upto 5-6 whistles. When pressure cooker is cooled completely then remove the excess water and churn it. If required  then pass through strainer. Add salt and sugar as needed. Serve after it is completely cooled down. Do not serve hot it might hurt your baby.

Semolina upma (Baby Food)

I am back with my new variety of baby food.  It is feed to baby when she is starting to take solids and some soft pieces of food.

To make Semolina Upma you will need :-

2-3 teaspoon of semolina
1/2 teaspoon butter
Pinch of salt
Pinch of cumin powder
Water as needed
1/2 teaspoon yogurt

Take a pan and add butter/ghee to it. Add semolina and roast it till it changes color little bit. Add water little at time  and add yogurt. Add salt and cumin powder to it. Stir continuously till it gets cooked. Take out in bowl and cool down completely. Feed your baby when it is cooled completely.

Vegetable Soup - Baby Food

I like to feed my baby different food. Today I thought of making vegetable soup for him. 

To make Vegetable Soup you will need :-
1 big tomato diced
2-3 small piece of cauliflower
2-3 small pieces of  cabbage
7-8 frozen peas
Sugar to taste
Salt to taste

Take a bowl and wash all the vegetables. Now in pressure cooker add tomatoes, cauliflower, cabbage and peas with 2-3 cups of water and hear about 5-6 whistles. Allow pressure cooker to cool down. Remove all water. Pass all the vegetables from big hole strainer and mashing it little bit so it becomes pulpy. Add salt and sugar if needed. Serve at room temperature.

Sweet Potato and Tomato Puree - Baby Food

Hey guys I am back with new baby food recipe. I tried this with my baby and he loved it.

To make sweet potato and tomato puree you will need :-

1 big tomato diced
half sweet potato washed and peeled
Salt to taste

Take a bowl and add washed diced tomatoes and washed diced sweet potato. Pressure cook them with 2-3 cups of water for about 6-7 whistles. Allow the pressure cooker to cool down. Drain the water off. Take a net strainer and pass the pieces of tomatoes and sweet potato from it with the help of spoon. Add little salt if needed. Serve your baby when it is room temperature.

Sweet Corn Soup

I like to try new things and with different ingredients. I made sweet corn soup yesterday and thought let me share the recipe of it.

To make sweet corn soup :-

1 del monte cream style corn tin
1/2 cup mixed vegetables
1 teaspoon vinegar
1 teaspoon black pepper
Salt to taste
Sugar to taste
2 cups of water
1 green chilly chopped

Take a pot and dd cream style corn and water and mix well. Allow it to boil completely. Add mix vegetables, black pepper, vinegar, salt and sugar to it and mix well. Allow it to boil little bit. Your soup is ready. Serve hot.

Raab- Baby Food

My mother taught me many different baby food to prepare for my baby.

To make Raab you will need :-

1 tablespoon wheat flour
1 teaspoon ghee
1 teaspoon mashed jaggery
6-7 tablespoon water

Take a pan and add ghee to it. Add wheat flour and saute it till it gets mixed properly with ghee without lumps. Add water and mix well and break all the lumps. Add jaggery and allow it to boil little bit till it gets thicker. Feed your baby after it is completely cooled off.

Apple Puree- Baby Food

I would like to share with you bunch of baby food. I make it everyday fresh for my baby boy so thought let me share so that it can help others also.

To make Apple Puree first peel of the apple skin, remove seeds and make small dice of it. Add it to water in pot and allow it to boil till the apples gets tender. Allow it to cool down little bit. Remove all the water and pass the apple through strainer. With the help of spoon pass it through sieve and feed the puree which comes out. You can also add water 1-2 teaspoon to make it liquidy.

Enchilada with Mexican rice

Hey guys I am giving you very easy Enchilada recipe. It is very easy to make and also delicious.

To make Enchilada you will need :-

4 flour tortillas
1 Rosarita vegetarian refried beans
1/4 cup chopped onion
1/4 cup chopped lettuce
1/4 cup cheese
1/4 cup chopped green bell peppers
1 tin of enchilada sauce
1/2 tin of tomato sauce
Taco seasoning as needed
Sugar as per taste
Chilly powder as per taste
Salsa as needed

Take a bowl and add beans and 2 teaspoon of salsa to it. Add 1 teaspoon tomato sauce to it. Add taco seasoning and mix well. Roast the tortillas with butter on stove.
In a dish add little bit of enchilada sauce and soak tortillas in sauce from both sides. Do it for all tortillas. Add beans mixture and little bit of vegetables to it and roll it tight. Put it in baking tray and pour more enchilada sauce to it. Add vegetables and cheese and bake it for 10 minutes. Serve hot.

Mexican Rice:-

2 cups rice
2 tablespoon tomato sauce
1/2 cup enchilada sauce
Salt to taste
Taco seasoning as needed
Water as needed
Take a pot and add all the ingredients and then let it simmer till the rice gets cooked.

Strawberry Sauce

Strawberry is in season and I thought of making something new. I had in mind to make strawberry sauce from long time and I finally made it.

To make Strawberry Sauce you will need :-

1 pound strawberry (cut into small peices)
1/2 pound sugar
1 lemon juice

Take a pan and add sugar and strawberries to it. Let it simmer on high flame for about 3-5 minutes. After that lower the flame to medium and stir continuously till all mixture thickens. Turn of the gas when they are fully cooked. Let it cool down little bit. Take this mixture and put it in mixing jar and blend it till it forms smooth paste. Strain it from strainer if you need.

Put strawberry sauce in refrigerator immediately, it will stay good for about 15 days. Then  put in freezer and freeze it.

You can use it in your icecream, milkshake, smoothies and lemonade.

Mexican Pizza

I tried to make mexican pizza for the first time at home and I got comments like they are much better than we eat outside. So I thought of sharing recipe with you.

To make Mexican Pizza you will need :-

8-10 tostadas (crispy tortilla- like roti)
1 rosarita refried beans tin
4-5 tablespoon salsa
1 teaspoon taco seasoning
1 cup bell pepper finely chopped
1 cup tomato finely chopped
1 cup onion chopped
Cheese as needed
2 teaspoon tomato ketchup
1 green chilly finely chopped

Make beans mixture. In beans mixture add beans, taco seasoning, ketchup and green chillies and 3-4 tablespoon salsa. Mix well and microwave it for 1 minute.
Take all chopped vegetables and sprinkle taco seasoning on it. Keep it aside.
Now apply beans mixture on 2 tostadas and place one over another. On the top tostadas add vegetables and cheese and microwave it for 1 minute. Cut with pizza cutter and serve with salsa and corn chips.


Wheat Sev with Milk

This is very unique recipe of  wheat sev. It is served with any gujarati recipe. It is my husband favorite sweet dish. I don't like it much but I thought of sharing so that it gives new idea for serving wheat sev.

To make Wheat sev with milk you will need :-
1 cup wheat sev
3 cups milk
Sugar as needed
1 teaspoon cardamom powder
3-4 tablespoon ghee
3-4 tablespoon roughly chopped almonds

Take a pan and add ghee to it. Add sev and roast till it gets brown. In another pan add milk and boil it. It will take approx 6-8 minutes. When it start making foam on top close the stove and pour hot milk in sev carefully. Add sugar as needed. Add cardamom powder and almonds to it. Stir occasionally till it gets only little liquidy. Serve hot.

Corn Chevda

Fresh corn are my favorite and I like to make many different things from it. So I made corn chevda this time.

To make Corn Chevda you will need :-

3 large corn cob shredded
1 teaspoon ginger chilly paste
3/4 cup milk
Salt to taste
Pinch of turmeric powder
1/2 teaspoon coriander cumin powder
2 tablespoon oil
1/4 teaspoon mustard seeds
Sev for garnishing

Take a pot and add oil and mustard seeds. Allow it to crackle. Add shredded corn to it and allow it to cook closing lid. Stir in between. Add milk and all the spices and then allow it to simmer. I like it little liquidy so I added more milk. You can adjust as per your choice. Stir till it gets cooked. Serve at room temperature or hot with sev.

You can store in refrigerator once it is cooled down for 1-2 days.

How to store fresh corn cob for long time...

I like corn subji, grilled corn cob, steamed corn cob, etc. Today I want to share with you how to store corn cob for long time. Last week I brought too many corn as they were in deal so I thought of  using eventually.

I cleared husk and the leaves of corn and cleaned them with a tissue paper and then placed corn cob (raw) in plastic bag and put them in refrigerator. It stayed good for about 5-6 days. You can grill them, make chaat and use different way.

Note :- If you keep corn in refrigerator with husk and leaves it will not stay good more than 2-3 days. So remove husk and leaves and then store them.

Bajri Ladoo

Festival season have started and today is the day before Janmashtami on that day we make bajri ladoo and offer to God. So today I made it and thought of sharing with you guys. It is basically called Kuler in Gujarati.

To make Bajri Ladoo (kuler in gujarati)

1/2 cup bajri flour
Water as needed
1 tablespoon ghee
1/4 cup jaggery

Take a bowl and add bajri flour, ghee and finely shredded jaggery and mix well so that there are no lumps. Add little water at time to make ladoo. You can keep these ladoo at room temperature for about 1-2 days after that it stays in refrigerator for a week.

Corn Fiesta Sandwich

I like to try with the new recipe and this recipe is an extension to alfredo sauce. I like it very much and it is enjoyed by all in my family.

To make Corn Fiesta sandwich you will need :-

1 cup frozen corn
2 cloves of garlic finely chopped
1 teaspoon garlic powder
1 cup diced bell pepper
1 cup milk
1 teaspoon sugar
1/2 teaspoon black pepper powder
2 tablespoon butter
2 tablespoon all purpose flour
bread slices
butter for roasting bread
1 green chilly finely chopped

Take a pot and add butter to it. Add all purpose flour to it. Allow it to roast little bit. Add milk little at time and mix well. When it comes to boil then add garlic to it. Add garlic powder, sugar, salt and black pepper and mix well. Add diced bell pepper and corn to it. Add green chilly and allow the mixture to get thicken while stirring continuously.  Allow the mixture to cool down.  Apply butter on both the sides of bread and roast it. Apply mixture on one side and press with other slice of bread and serve with ketchup.

Tip of the Day- Sorghum and Mamra

I like to mix and match with my snacks. My mother use to mix sorghum (puffed) and mamra (puffed rice) and then give us to snack. So I like it by mixing them both. Try this and you will surely enjoy.

Masala Sorghum (Dhani)

Puffed Sorghum is called Dhani in Gujarat. I like it very much. It is usually available during Holi festival. Last week when I went to grocery store I found it and I picked up immediately a packet of it.

To make Masala Sorghum you will need :-

3 cups of puffed sorghum
Salt to taste
1 teaspoon sugar (optional)
1 teaspoon red chilly powder
1/4 teaspoon turmeric powder
1-2 tablespoon oil
1 teaspoon mustard seeds

Take a pan and add oil to it. Add mustard seeds and allow it to crackle. Add puffed sorghum and all the spices to it. Mix well. It is enjoyed with tea or coffee.


Basil Pesto Pasta

Hey guys I am back with my new recipe, this time its pasta!!!

To make Basil Pesto Pasta you will need :-

2 cups of pasta 
2 tablespoon basil pesto
1/2 cup diced onions
1/2 cup diced green bell pepper
1/2 cup spinach roughly chopped
Salt to taste
1 teaspoon black pepper powder
1/2 teaspoon red chilly flakes
3-4 garlic cloves roughly chopped
2 tablespoon olive oil
1 tablespoon oil for pasta
5 cups of water for boiling pasta

Take a big pot and add pasta, water and one tablespoon oil for pasta. Let the pasta cook. After it is done drain all the water and allow it to cool down. Take another pot and add olive oil to it and add garlic to it. Add onions and bell peppers and saute it. Add spinach to it and cook it for a while. Add boiled pasta, basil pesto, black pepper and red chilly flakes to it. Add salt as required and mix well. Serve hot.

Cabbage Sandwich

I like to try new with the same old recipes. I add little twist at a time and try to make new recipe out of it.

To make Cabbage Sandwich you will need :-

3 cups cabbage roughly chopped
Salt to taste
5-6 tablespoon ketchup
Sugar as needed
3-4 cloves of garlic
1-2 teaspoon sriracha sauce
Pinch of turmeric powder
Pinch of red chilly powder
1-2 tablespoon oil
bread slices
butter as needed

Take a pan and add oil to it. Add cabbage to it and saute till it gets little soft. Add garlic along with cabbage. Add ketchup, salt, sugar and sriracha sauce to it. Mix well. Add turmeric and red chilly powder to it. Cook till all the water gets dried out. Now apply butter on two slices of bread on both sides. Put cabbage mixture on top of one bread slice evenly. Cover it with another slice. Roast it in sandwich maker or griddle. Serve hot with ketchup.

Strawberry Mango Smoothie

I just love strawberries. It is so juicy and rich in color that many colorful dishes can be prepared from it. 

To make Strawberry Mango Smoothie you will need :-

1 cup strawberry
1/2 cup mango powder
1/2 ripe banana
1/2 cup yogurt
1 cup milk
Sugar as needed.

In a mixing jar add strawberry, mango powder, banana, yogurt and milk. Add sugar if needed. Churn all the things. Serve chilled. I do not prefer to add ice in it but you can add it.

Spinach Corn subji (dry)

I like to use spinach atleast one time a week in my diet. Today I am sharing you very simple recipe of spinach corn subji Indian style which my mom use to make for us. She was preparing only using spinach but I added corn to enhance its flavor.
To make Spinach Corn Subji you will need :-

2 buch of spinach roughly chopped
1 cup frozen corn
3-4 tablespoon chickpea flour
Salt to taste
1/2 teaspoon red chilly powder
1/2 teaspoon coriander cumin powder
1/4 teaspoon turmeric powder
1-2 tablespoon oil
1 teaspoon mustard seeds

Take a pan and add oil to it. Add mustard seeds and allow it to crackle. Add washed and roughly chopped spinach to it. Let all the water dry out. Add frozen corn kernels to it. Add all the spices. Sprinkle chickpea flour on top of it. Serve with roti or paratha.

Aamras

Who does not love mangoes? It is favorite of  my family. I make many recipes out of it. Today I am sharing you recipe of aamras which is very simple but still very tasty. It replaces dessert in summer time. We do not get good mangoes like India but then also I made aamras from kent mangoes which are available here.

To make Aamras you will need :-

2 mangoes ripe
1 cup water
Sugar as needed

Wash mangoes properly. Then roll mangoes with your finger and then put it aside. Open the top of mango and then slowly push down pulp and seed in the pot. Remove all the pulp from mangoes and then clear the seed also. Add little water to it. Add sugar if needed. Churn with the help of blender. Put in refrigerator to chill. Serve chilled with poori or roti. 

Easy snack bites

I am back with my new recipes. We had some few guest coming over last weekend. I did not wanted to cook too much for appetizer. So I tried with very simple recipe and very yummy. It is liked by all.

To make Easy snack bites you will need :-

1 packet ritz crackers ( different flavours)
ketchup as needed
1 cup green bell peppers cut in triangles
1 cup onion roughly chopped in big pieces

Take a plate and place different flavor ritz crackers on it. I used Italian seasoning flavor cracker and lightly salted crackers. Put some ketchup on top of it and add 1 piece of onion and bell pepper on it. Serve them.

Spinach and Garlic Pasta

Hey guys I am back with my new recipe of Spinach and Garlic Pasta. I made it for first time and I liked it so much so I wanted to share with all of you.

To make Spinach and Garlic Pasta you will need :-

1 cup spinach roughly chopped
4-5 cloves of garlic minced
1/2 cup bellpepper
1/2 cup green onion
Salt to taste
1 teaspoon oregano
1 teaspoon chilly flakes
1 teaspoon black pepper
1/4 teaspoon cumin powder
1 cup Parmesan cheese
1/2 cup mozzarella cheese
2 tablespoon butter
1 tablespoon olive oil


Take a pan and boil pasta (already shared recipe). Put it aside to cool down. Take another pan and add butter and olive oil to it. Add minced garlic to it. Add bell peppers and green onion to it add spinach  to it and saute it for 2 minutes. Add salt, oregano, chilly flakes, black pepper, cumin powder to it. Add boiled noodles to it. Add parmesan and mozzarella cheese to it and mix well. Serve hot.  

Sheera (Wheat Flour)

I am back with my healthy recipe again. My mother was with me for a while and she taught me how to make yummy sheera. I liked it too much.

To make Sheera you will need :-
1 cup bhakri flour
1/2 cup boiling water
Pinch of cardamom powder
3-4 tablespoon sugar
3-4 tablespoon ghee

Take a heavy bottom pan and add ghee to it. Add bhakri flour when ghee melts. Saute flour till it gets brown in color and starts smelling. Add boiling water to it and mix well. Add sugar and cardamom at this time and mix well. Saute till the sheera moves on its own in a lump kind. Enjoy hot sheera.

Mango and Banana Smoothie

Hey guys summer is back and I thought of making something which will help in summer to fight with heat and also healthy.

To make Mango and Banana Smoothie you will need :-

1 large banana
1 medium mango
1 cup milk
Sugar as needed
2-3 tablespoon yogurt

Take a mixture jar and add 1 mango pieces after pealing it. Add banana by roughly making pieces. Add milk, sugar and yogurt and churn it. When it gets mixed properly serve chilled. You can also add ice cubes to it to make it more chilled.

Tip of the Day

Hey guys I like to share with you many things any new things which I try it in my kitchen and the one which was helpful to me.

Whenever you want to take out water from opo squash or cabbage then sprinkle little salt on it and keep it aside for 10-15 minutes. Afterwards you can squeeze all the water and use it. 

It can be used to make paratha, muthiya, etc.

Pooranpoli

I am very much fond of sweets. My mother cooks lot of good stuff. I learned from her how to make Pooranpoli at home.

To make Pooranpoli you will need :-
For Pooranpoli filling :-
 
1 cup boiled toor dal ( pigeon peas)
1/4 teaspoon cardamom powder
Pinch of  nutmeg powder
1/2 cup sugar
1/2 jaggery

To make outer covering you will need :-
1 cup wheat flour
1/4 teaspoon oil
Water as needed
Butter as needed

To make Pooranpoli take boiled dal to big pan and add sugar and jaggery to it. Mix it well till the mixture thickens on low flame. Add cardamom powder and nutmeg to it.  Allow the mixture to cool down. To make outer cover of it make a dough little hard than roti. Now roll the roti and put a small amount of pooranpoli mixture on it and cover it and roll it again. Do not roll it too thin. Roast it on low flame on both sides till it gets cooked or golden spots are seen. Take out of flame and then apply ghee or butter on top of it and serve.

Mango Punjabi Pickle

I like to learn new things from everyone especially from my mother when she cooks or prepares something new. I learned Mango Punjabi Pickle from her. 

To make Mango Punjabi Pickle you will need :-
1 large raw mango (diced in small pieces)
4-5 tablespoon red chilly powder
Salt to taste
70 grams ground mustard
30 grams fenugreek grounded
1/2 tablespoon asofoetida
1/2 teaspoon turmeric powder
1/2 cup vinegar
1/2 cup oil

Take a mango and wash it and make small dice of it. Keep it aside. Mix all the ingredients except vinegar in big bowl. Add diced mango to it and mix well. Keep it aside by covering this for 2 days. Now add vinegar to it and mix well. Store it in glass jar and keep it in refrigerator. It can stay good for 6-8 months.

Papadi no Lot with twist


I have already shared recipe of Papadi no Lot. When the water of chilly, salt, carrom and cumin seeds are boiling you can add little rice flour at time and mix fast without lumps and then add little bit then it can be cooked well on gas stove also. Instead of doing in microwave you can do it on gas stove also.

Chana Methi Pickle

Summer is about to start and I thought of making Chana Methi pickle. This pickle is very easy to make it. It just consumes little pre- preparation before making it. 

To make Chana Methi pickle you will need :-
1 cup black chana (available at Indian Grocery Store)
1/4 cup methi seeds (available at Indian Grocery Store)
Pickle Masala as needed (Masala for sour pickle)
1/2 cup oil
1 big mango diced in small pieces
Salt to taste (if required)

Take a bowl and soak chana for 24-26 hours. Take methi seeds in another bowl and soak it for 8-10 hours. Take water from chana and methi seeds after required soaking time. Take a big raw mango and peep it and wash it. Make very small dice of it. Heat up oil till its luke warm and add pickle masala little at time and then add soaked chana and methi in it. Mix it well. Add raw mango to it and mix well. Add more masala and oil if required. Add salt if required after tasting it. Store it in glass container. It can stay good for about 1-2 days at room temperature and then refrigerate it. It stays good with less oil in refrigerator only.

Corn (Makai) Vada

Hey guys I am back with new recipe. Today I will share you very traditional recipe of Gujarat. Vada is form of snack which can be stored for a week.

To make Corn Vada you will need :-
2 cups yellow corn flour
1/2 cup bajri flour
4 tablespoon yogurt
1 teaspoon carrom seeds
1 tablespoon ginger chilly paste
Salt to taste
2 teaspoon oil
1 teaspoon sesame seeds
Water as needed
Oil for frying
1/4 teaspoon red chilly powder

Take a bowl and add all the ingredients except water. Mix well. Add water slowly and make a soft dough. Take oil in pan for frying. When oil gets hot make small balls of dough and flatten it with the help of your palm and slide it in medium hot oil. Do not overcrowd vada in frying pan. When one side is cooked turn it over and cook it on other side. When you see golden spots on it take out of oil. Your vada are done, Enjoy with a cup of tea or with any pickle.

Corn Chat with twist

Hey guys let me share with you very instant and quick snack which you can prepare in minutes. It taste too good and you can change ingredients as per your choice.
My husband asked me for quick snack but it should be little warm, I looked at my frozen section and saw there are corn kernels in there. I made corn chaat.


 To make corn chaat you will need :-

1 cup corn kernels (frozen)
Pinch of chaat masala
Salt to taste
3-4 tablespoon diced cucumbers
3-4 tablespoon diced onions
2-3 tablespoon Green onions ( optional)
Cumin powder as per taste
1 teaspoon lemon juice

Take a microwavable bowl and add frozen corn kernels to it. Make it warm as per your microwave temperature. Now add all the remaining ingredients as per your choice and serve.

Opo- Squash and Patra Subji

When I do not feel like cooking much I try to make food which is on hand or use leftover to make a new one. Today I had Opo- Squash ( Lauki/Dudhi) subji as leftover. My mother makes this subji often and it is liked by everyone in our house.

Just add frozen patra (available in Indian Grocery Store) to the Opo-squash subji and little bit of water and cook it some time and your subji is ready. Add patra just before serving otherwise it will loose its shape and will not taste good. Add chopped coriander on top of it to make it more flavorful.

Coconut and Nuts ladoo

Hey guys Diwali is approaching and I thought of making something quick and although healthy as sweet dish. I checked out things which I have on hand and quickly made this yummy ladoo. Moreover there is no butter (ghee) or any sugar added in this ladoo.

To make Coconut and nuts Ladoo you will need :-
4-5 tablespoon dry coconut
1 tablespoon cashew
10-12 pitted dates (washed properly)
1-2 fig
3-4 tablespoon golden rasins

Take all the ingredients and make small pieces of it except coconut. Add all this to mixture jar and blend till it gets crumbly mixture. Churn according to your liking.  Take this to a bowl and make ladoo the size you want. I like to make a bit size ladoo so I made it small.

Note :- You can also add coco powder or some chocolate syrup if you like.

Sweet Boondi

Last week I had some guest  to come over. I was thinking of making sweet dish at home. Then on searching I found that sweet boondi can be prepared. I had some left over gulab jamun and then I thought of mixing sweet boondi and gulab jamun and it taste really good. I have tasted such combination in India.

To make sweet boondi you will need :-

1 cup besan ( chickpea flour)
Water as needed
1 cup sugar
3/4 cup water (for sugar syrup)
4-5 strands of kesar
1/4 teaspoon cardamom powder
Oil for frying

Take a bowl and add besan to it and then add water as needed to make pouring consistency batter. The batter should be such that it should go down from spatula which has hole in it (jharo in India). Keep oil on wide pan and when the oil gets hot then take this spatula which has hole and pass this besan mixture from it. Do not overcrowd them. Be careful so that you do not burn. Then turn them after some time and when it gets cooked then keep it aside after taking out from oil with the help of spatula.

For making sugar syrup add sugar and add water till the sugar gets dissolved. Put it on flame and mix well. Allow it to boil. Then add cardamom powder and kesar to the sugar syrup.

Add all the boondi to sugar syrup and mix well. Soak boondi till 1-2 hours. After that it is ready to serve. It can stay good for 1 day at room temperature after that it stays good for 3-4 days in refrigerator.

Khichu (Papadi No Lot)- Microwave Recipe

I just love Khichu. Navratri is approaching and at that time in India at most of the navratri spot, khichu is available. I use to enjoy a lot during that time. I tried the easy version of Khichu in microwave.

To make Microwave Khichu you will need :-

1 cup of rice flour
2 cups of water
1/4 teaspoon cumin seeds
1/4 teaspoon sesame seeds
Salt to taste
1 tablespoon oil
1 teaspoon green chilly chopped
1/4 teaspoon carrom seeds
1 microwave bowl

Take a microwave bowl and rice flour and all the dry ingredients and then mix well. Add water and oil and then mix well. Put in microwave for about 2 minutes. Take it out and mix well. Do this procedure at every 2 minutes till the rice flour gets cooked. (My microwave took 6 minutes). Allow it to cool down  little bit and then enjoy.

Note :- Be careful while handling the microwavable bowl it might be hot so do not burn yourself.

Tip of the day- Spicy Puffed Rice (Mamara)

Hey guys it is raining today over here and it feels so amazing that I like to had something warm in my morning breakfast. I checked my Puffed Rice (Mamara) and thought of making little warm. 

I just took a microwavable bowl and then put mamara in microwave for 10 seconds (time may vary as per your microwave) and it became warm to enjoy in my breakfast.

Tip of the day- Making sandwich tastier

Hey guys I am back with my new tip. I try to make different sandwich at home with the toppings and spread which I like. Yesterday I tried with hummus and coriander chutney and it turned out too good. I also like tomato and avocado sandwich.

To make all these sandwich I always add little chaat masala to my spread or sprinkle it. It gives a unique Indian taste to all the sandwich.

Try this and you will surely love your sandwich.

Watermelon Juice

Fresh fruits refresh us and if fresh juice is made out of it than we can enjoy at anytime in lunch or dinner. Last weekend I had some friends at my place and I planned to make watermelon juice so that it can accompany in dinner with pav bhaji.

To make Watermelon juice you will need :-

4 cups of watermelon roughly chopped
1/4 cup water if needed
Salt to taste
Chaat Masala as per taste
1/2 teaspoon cumin powder

Take watermelon pieces to blender and then blend it. Drain juice out of strainer. Then add salt, chaat masala and cumin powder as per your taste. Serve cold. You can also freeze it for a week.

Note :- If you are making it for vrat then you can avoid salt, chaat masala and cumin powder.
